How I Created These Colorful, Super Duper MOIST Cake Balls With Instant Pudding Packets

This past weekend was Mother’s Day weekend and I wanted to do something special to celebrate it. My husband and I had some kid-free time and we came up with the grand idea of creating these Super Duper Moist Cake Balls together! Ok, I lied, it was actually ALL my idea and I just employed his help. Does that mean I can call him Give It A Whirl Boy since he helped me with one of my blog projects? Keep reading to find out how I added a secret ingredient to make these cake balls the moistest cake balls you ever did have.

Here is how I created these Super Duper Moist Cake Balls

The secret ingredient is…

Want to know what my key ingredient is with any cake mix I ever use? Sugar-free instant pudding packets from Jell-O! Yup, and I use the whole entire packet. For these two batches of cake balls that I whipped up, I used one packet of sugar-free cheesecake pudding for the pink and blue balls, and for the green cake balls I had to use my favorite pudding mix, pistachio pudding (sugar-free as well). I always opt for any of the sugar-free pudding packets since I think it is unnecessary to add even more sugar to the cake, but you can feel free to use any pudding packet your heart desires.

Baking the cake

First things first! For these Super Duper Moist Cake Balls, you need to decide on a boxed cake mix to use. I went with Betty Crocker’s Super Moist Rainbow Chip mix. I created two batches of cake balls so I needed two boxes of cake mix. To add a much-loved moist cake ball you then need to choose a pudding mix. You will also need to choose a can of frosting that you would like to mix in to hold these balls together. I used Betty Crocker’s Rainbow Chip frosting.

Make sure you have some decent bakeware to use! I love my Circulon nonstick set.

PRO TIP!

The cake mix calls for 1/2 cup of oil. I used ghee (butter) instead and they came out marvelous!


I used a 9×13″ cake pan and baked the cake for 28 minutes. After the cake cools I then scrape the top and middle part away and pour the crumbled cake into a large mixing bowl. I do not use the bottom part of the baked cake because it has that baked texture to it. The top of the cake has plenty of that baked texture to it and that is plenty for cake balls. You will want to crumble all of the cake into the smallest pieces. You do not want large cake pieces in your mixing bowl.

Frosting to hold them all together

The frosting is what you will be using to hold these balls together and to give them a big punch of sweetness for that sweet tooth of yours. Once you have all of the cake crumbles in the large mixing bowl, add 3/4 of the frosting to the bowl and mix it all up until well incorporated. I use a soft spatula to do this. You might need to use the entire can but I do not recommend it. This is going to take a bit of muscle to stir this all up so pull up your sleeves and get ready to mix, mix, mix!

After the cake and frosting is completely mixed you will want to make sure you have VERY CLEAN hands and you will want to take the mixture with your hands and form 1-inch cake balls

Chill them balls!

After you form those cake balls with the cake crumbles and frosting you will want to freeze the balls for a short period of time. 15 minutes is plenty! Just be sure that you do not freeze them for too long. You don’t want them completely frozen.

Oh my goodness! Who here remembers this show The State? Truth be told, that while my hubby and I were working on these balls there were some humorous injections pertaining to balls jokes! Yeah yeah… I am 38 years old and still haven’t grown up! lol!

Anyway…

You will need to choose some candy melts to dip your balls in. I went with the Wilton Candy Melts. I was able to locate the new Brights colors and got bright pink, bright green, and bright blue.

Sprinkles galore!

Hello and welcome to the fun part of this post! Here is where we get a bit messy and have a bit of a sprinkle explosion. You can get creative here and use the sprinkles of your choice to decorate these Super Duper Moist Cake Balls! I had a wide variety of many different rainbow sprinkles on hand so my moist cake balls have a lot going on.

Final thoughts

Boy! These Super Duper Moist Cake Balls sure were a labor of love and completely and totally worth all the time and effort put into making them. My family came over after Mother’s Day dinner and we played cards and ate cake balls! These moist cake balls were enjoyed by all, both children and adults. They are a joy to eat, that is for sure! How many will you eat? Always remember to save room for dessert!

How I use CBD in my life – A little bit of my story

For me personally, I choose to use CBD to help with my ongoing battle with anxiety and depression. I have dealt with these problems in life for as long as I can remember. CBD helps alleviate these health issues for me. CBD does not make me high but what it does is CBD helps balance me out. When I feel anxiety or depression creeping in on me I use CBD to erase it all away.

Right now my primary use of CBD products is to help me battle through benzodiazepine withdrawal. I have been on Klonopin for seven years (prescribed by a doctor and never abused). I am currently almost done with my taper that I started in early October and I will be jumping off the med soon. I switched over to Valium for a smoother taper and I am currently on a dose that is virtually nothing (0.5mg of Valium).

Some people say to avoid CBD during benzo withdrawal and others will tell you that CBD is a miracle product for them. I am part of the latter. CBD is truly a miracle product for me. It aids in evaporating and dissipating withdrawal symptoms. Benzos are extremely hard to come off of and many will even venture to say that they are harder to kick than heroin. I feel grateful that I have CBD products on-hand and available to me to help me get off this hellacious medication that I was prescribed for way too damn long!

Each of these high dose edible hard candies contains 50mg of high quality extracted CBD oil. These edibles from Paradise are the perfect amount of CBD for when you need a higher dosage. My regular dosage of CBD is usually 30mg. Having a 50mg edible on hand is a great thing to have for when you need a bigger boost in relief. The high dose caramel edibles each contain 50mg of high-quality extracted CBD oil as well. These caramels make taking CBD a joy! The caramels have a very pleasant flavor.

Just living for those Cheat Day thrills!

I ended up taking home a big bag of candy that was chock full of several (and I do mean several) different flavors of taffy. We opted for the larger size bag that you could fill up with as much candy as you could stuff in there. It was $9 for the large bag and I believe it was $7 for the all-you-could-fill smaller bulk candy bag. There were so many different unique flavors of soda-pop at Rocket Fizz and I need to go back when I have a bigger chunk of money to spend here. I also am not a pop-drinker AT ALL but the unique flavors here are worthy of a try. My daughter ended up getting a black licorice pop and boy was it ever tasty! You can choose 4 flavors of soda-pop and build your own 4-pack at Rocket Fizz for $8.00. That is a great deal at $2 a pop! Otherwise, the soda pops sell for $2.29 a piece. The next time I visit this place I am going to get adventurous and try out the weird flavors of soda pop. I am thinking that it would be fun to purchase a couple of different 4-packs and do a video review with my 9-year-old daughter, Chloe Pearl! She is my little blogger sidekick and she has an adventurous palate when it comes to food and drink. Just like her momma, she will try pretty much anything once!

As you can see in the photo below, we did take home quite a bit of taffy in many different assorted flavors. I wonder how long this bowl of candy will last here? Probably not long!

Final thoughts

I believe that my readers will really enjoy their first visit to Rocket Fizz! My little family of three sure had fun browsing around this soda-pop and candy shop! There are so many fun and unique items here at Rocket Fizz and it is a lot to take in all at once. It seems as though everywhere I looked I could spot something that I wanted to take home with me to try out! When you do visit this establishment, be sure to bring a decent wad of money with you to blow here. And always remember to eat and drink with an open mind! See something of interest? I placed an order for a couple of Kiss My Keto Chocolate Bars. I went with the Original flavor and Hazelnut bar. These (almost guilt-free) ketogenic chocolate bars are sugar-free and sweetened with stevia. Why do I say almost? Though they are sugar-free they still do have some calories that you need to be aware of! If you eat the entire bar of the original flavor that comes out to 380 calories… so don’t eat the entire bar in one day! What I like to do is enjoy the chocolate bars in thirds, which is the suggested serving size. One serving is 130 calories. You can see the macro breakdown below.

What I love about MunchPak is that it is a fabulous opportunity to try out new snack food products. In my small subscription box, I received six different snacks. You know me, always wanting to try new foods and giving things a whirl. I live for the thrill of this. My soon-to-be 9-year-old daughter Chloe is the same exact way. She came home from school and saw this MunchPak box and it brought a ton of excitement to her day. We took turns opening up the products and trying them out. It was a really great experience with my daughter and it really encourages her to eat with an open mind. Chloe even exclaimed, “these are the best barbeque chips I have ever had”. My snack box included six new-to-me international snack foods. There was a mix of sweet and savory snacks in my MunchPak. I have never seen these snacks ever in my life. So imagine my excitement and my surprised face when I opened up my box. The really neat thing about this snack box is that these snacks come from all over the globe. Each snack is labeled with the country that it originated from.

As you can see in the photos below there are some pretty unusual countries like Israel and Turkey. I do not ever think to try foods from these countries because their availability in the US is sparse. So this is the wonderful thing about the MunchPak. They bring the snacks to you!

Our favorite picks from our MunchPak

Since my daughter and I have been indulging in some not-so-healthy snacks lately we really loved the candies that satisfied our sweet tooth. My favorite candy that was included in my shipment were the Zazers Mixed Fruit Candies. They came from the UK and they were a lot like the Mentos that we have here in the US. They had a really fantastic fruity flavor.

The DeeBest Sour Super Dooperz Apple Flavor candies were also a big hit with my daughter and I. We love sour gummies so these sweet little treats were devoured quite quickly!

Chloe really loved those Tomahawk BBQ chips. They were our favorite savory snack that was in our MunchPak.

  • Everyone participating brings a wrapped gift without a name tag on it.
  • You write down the numbers 1-12 on a small piece of paper and fold it up.
  • Everybody chooses a number.
  • The person with the number 1 chooses a wrapped gift.
  • The next person can either steal the gift that #1 had or they can choose a wrapped gift.
  • If person #1 has their item stolen, they choose another wrapped gift.
  • Player #3 either steals a gift from player 1 or 2 or can choose a wrapped gift
  • You can set your own rules about how many times an item can be stolen. Some people will allow an item to be stolen once, twice, or three times. It is your choice.
  • You continue this process until person #12 goes up to steal or choose the last wrapped gift.
  • At this point, everyone should have a gift.

Erma’s Frozen Custard is the place to be if you want some top quality frozen custard and some exciting, fun ways to top it. This place has so many wonderful flavor concoctions it is somewhat overwhelming to decide on just one! Give me two. NO! Give me three! The flavor options here are just mindblowing. This was my first time visiting with my little family of 3 and we each chose our own parfaits. I just had to go with Peanut Butter & Jelly. I really have a thing for PB&J and that is my jam right now. My husband went with the S’mores Parfait. I believe I heard him moaning over just how good it was. My Erma’s Frozen Custard Review

Hard work does pay off… in frozen treat form!

We had a yard sale for the past few days and this was a great place to go to reward ourselves for our hard work. Chloe had a blast with the yard-sale (it was her first) and she was so thrilled about earning some money. It was her idea to go out for ice-cream. She insisted that she wanted to purchase her own sundae with her own money. That kid had some sheer determination to spend money last night!

Always seeking something new to experience

It was my idea, of course, to try out something new. Erma’s Frozen Custard is so conveniently located that we could actually take a stroll and walk on over there. How have I been living in St Clair Shores for so long and never ever stopped at Erma’s. It saddens me to think about how much I have been missing out on all these years. I am definitely going to visit this place one more time before they close for the season. I already know what I’m going with too~ Raspberry Truffle Parfait!

Peanut Butter Jelly TIME!

I want to discuss a bit on my parfait that I ordered, the Peanut Butter & Jelly! Let’s start with the bottom here: first up is vanilla custard, a layer of peanut butter, chopped peanuts, more vanilla custard, a generous helping of strawberry jelly, more nuts, whipped cream and then topped off with a cherry. I gotta say that I enjoyed this immensely! Yes I said that word and I reserve it for rare occasions!

What I love about this place is that they have some great flavors of dip that you can go with! I love that hard-shelled dip on my cone. They even offer a Confetti Cake dip! I am addicted to any and all things cake flavored and I know I will be going with that dip someday.

I absolutely love their creativity here and there is something for everyone.

Candy Coatings and Toppings at Erma’s Frozen Custard

Numerous options to choose from here! Erma’s Frozen Custard offers sundaes where you can choose one topping. These sundaes also come equipped with whipped cream and a cherry on top because no sundae is complete without that. Then they offer something called an Explosion! With the Explosion, this is where you can really let your creativity shine and you get your choice of not one, but two different toppings. More than just parfaits and sundaes!

If you are craving something besides a parfait or sundae you are in luck because Erma’s offers a variety of other things you can go with. They offer milkshakes, slushies, floats & coolers. They offer specialty desserts as well such as: Custard Puff, Brownie Delight, Strawberry Shortcake, Banana Split, and a peculiar item known as an Upside-Down Banana Split (that is something I most definitely need to try!).

Erma’s Frozen Custard offers 100% Michigan dairy products and their frozen custard is gluten and soy-free. You can read up on this more HERE.

My one beef about this place, speaking honestly here

These parfaits come in at $6.30 a piece. For a family of 3 to go out for parfaits here you are going to have to fork over $18.90. I am not what I would consider a stingy person whatsoever but for the amount of ice-cream and toppings that they give you for $6.30 just is not enough for me. I truly feel that maybe these should cost a little less or possibly just make the serving size larger. I will visit this place again when I have the means to, but I really believe that the price is a tad too steep. We usually do not pay that much to go out for ice-cream. We can go to Menchie’s and do big build-your-own froyos with a ton of toppings and usually only be out $15 for the visit there.

Tou & Mai REVIEW Midtown Detroit, MI

I have been trying to lose my halo halo virginity for well over a year now. A freaking year! I discovered this crazy cool concoction on Instagram one day and ever since I have been dreaming of the day that I would get a chance to give this a whirl. My day finally came at Tou & Mai in the Midtown section of Detroit, MI yesterday. This Tou & Mai review will cover my first time experiences at this neat little place that is nestled down in the Midtown area of Detroit.

I was going to share this post for my Tried It Out Tuesday feature but I am really eager to share the details with you and since it is Sunday, maybe you can head on over there today to give this extraordinary and unparalleled dessert a try! There truly is no other dessert on this planet like it.

Tou & Mai is a quaint and curious place! There is so much to see and take in, in such a small space. The first thing you see when walking in is the big white menu. I analyzed the menu online before visiting so I already knew what my strategy was when it came down to deciding and ordering. I started off with a passion fruit boba tea and of course I had to get myself the Hello Hello (their version of halo halo). Click HERE to get a better look at the menu.

I planned on getting the Hello Hello most definitely and I wanted to try out the Tricolour Tapioca but bummer… they were temporarily out of that dessert. That one sounded so fascinating to me and it will be next up on my list of to-try items at Tou & Mai. Here is a description of the tapioca dessert.

Since I could not try out the tapioca I figured I should go ahead and satisfy my boba addiction with a Sweet Tea Boba. I went with the passion fruit flavor. The passion fruit boba was the perfect amount of sweetness and the mango star jellies were a big bonus to go with the exotic flavor of passion fruit. If you have never tried passion fruit the way it can be best described in my terms is a sweet and sour exotic fruit. It has the perfect balance of both. It currently has earned the top spot on my list of favorite fruits, for the moment anyway!

What the heck is halo halo?

Halo halo is a famous dessert in the Philippines. To create it they use a purple ice-cream that is derived from a purple yam, otherwise known as ube. It also has a scoop of mango ice cream, coco de nata, aiyu jellie, basil seeds, red adzuki bean, sala cider, coconut milk, condensed milk, wafer roll, and toasted candied coconut. Wowza! That sure is a lot to take in and process right? Google might just have to be my friend here to tell me what exactly it was that I ate! Let’s explore this a little bit more!

This was my first time trying ube and when you put that together with all of these other unique ingredients you get one hell of a memorable dessert!

Having actual beans in my dessert was also another first for me. They include red adzuki beans in this dessert. Odd huh? These are sweet red beans and they are a magnificent source of protein! A one cup serving of these beans is a whopping 39 grams of protein. I would say they use about a quarter cup in their Hello Hello. I enjoyed these beans immensely!

For the next ingredient Wikipedia sure came in handy so I included that information as a quote directly from he source.

Nata de coco is a chewy, translucent, jelly-like food produced by the fermentation of coconut water, which gels through the production of microbial cellulose by Acetobacter xylinum. (source: Wikipedia)

This is really a complex dessert! I really had to use Wikipedia for the aiyu jellie as well since I am not familiar with it whatsoever.

Aiyu jelly, known in Taiwanese Hokkien as ogio, and as ice jelly in Singapore, is a jelly made from the gel from the seeds of the awkeotsang creeping fig found in Taiwan and East Asian countries of the same climates and latitudes. Wikipedia

Basil seeds! I did a little research and discovered that these seeds are void of calories but rich in antioxidants. They are also great for your skin and beneficial for a diabetic.

The sala cider is a fruity ingredient but I could not gather much information on that. If anyone has knowledge of this ingredient, feel free to leave me a comment and fill me in.

The Hello Hello here also used coconut milk and condensed milk. The dessert is topped with candied coconut which is sure to satisfy your sweet tooth and it also has a beautiful orange glow to it.

And let’s not forget those two wafer sticks that really stand out and scream halo halo! No halo halo frozen treat is complete without those wafers. There were two in the dessert and the three of us sharing. Joe, my husband, got left out.

More than just a place to grab dessert!

Need to do a little bit of Asian grocery shopping? You can certainly load up here at Tou & Mai. They packed in a lot of Asian goodies in this small space. My 8-year-old daughter had fun looking at all of the colorful and peculiar packaging. Anyone want to send a crisp new $100 bill my way because I sure would have a ton of fun blowing a big wad of money in this place.

Oh and macarons!

They also have various flavors of fresh macarons available at $2.49 each. I have no doubt they are delicious but honestly I felt as though the price was somewhat steep for one macaron so I passed. Bummer! The flavors did sound intriguing.

I scream for ice-cream!

Tou & Mai also has a small selection of ice-creams available for $3.29 a scoop. That price seems reasonable to me. If you are not going to go with their Hello Hello dessert at least treat yourself to some of that delish purple ube ice-cream. You won’t regret it! Then you can boast to your friends that you tried a purple yam ice-cream! Wink!

Hot drinks

The air is getting quite crisp and nippy so if you are not into cold treats on cold days they have some hot beverage options. The tea flavors are unusual and impressive. I am definitely going to stop in here on a chilly day and give one of those teas a whirl! I am all about trying new things and I love the tea flavors they offer. The only problem? Deciding on one flavor because they all sound interesting.

Menchie’s is nothing new to me. This serve-yourself frozen yogurt bar has been a family favorite dessert destination spot for years now. The great thing about Menchie’s is that each and every trip here can be a new experience. There is always a wide variety of frozen yogurt flavors to choose from, as well as sorbets. Menchie’s also often introduces new flavors to try to keep things exciting. We go to Menchie’s to celebrate. We go to Menchie’s to drown our sorrows on a bad day. I always joke around about Menchie’s being the best medicine and a remedy to take your day to better heights. When I’m stuffing my face with froyo I don’t have a care in the world. This Menchie’s review will inform you of everything you need to know about this unique frozen yogurt shop!

Serve Yourself At Menchie’s

Upon walking in you see a serve yourself frozen yogurt and topping area. How neat! I have always had a spot in my heart for frozen yogurt. I used to get so excited when my mom took us to TCBY and we could choose 3 different toppings for a parfait. You, however, did not have the opportunity to serve yourself there, somebody else took care of you. Menchie’s has a help yourself frozen yogurt bar and a serve yourself topping bar where all your wildest dessert dreams can become a reality. You can build and create anything your heart desires. I love this help-yourself approach to frozen yogurt. It is a gratifying experience to walk into a place like this and create your own little (or big) cup of edible art.

Get creative at Menchie’s

At Menchie’s your creation is completely and totally up to you! The froyo is in your hands. Your froyo creation is sold by weight. So if you go wild and crazy with the froyo and the toppings be prepared to pay a hefty amount for that epic creation of yours.

My local Menchie’s has seven self-serve froyo stations and each station has two flavors. You can help yourself or swirl both flavors together. This means that there are usually 14 different flavors available. One of my usual go-tos is the Takes The Cake Batter. The Rich ‘n” Nutty Pistachio is another favorite. The pistachio always gives me flashbacks of the pistachio pudding that my grandma used to make with me and my sister.

Menchie’s toppings… the fun part!

My favorite part of visiting Menchie’s is dressing up my froyo with all of the available toppings. Decisions! Decisions! Only so much can fit into the cup so you have to be a little choosy with what you go with. Menchie’s has the available toppings menu online. Please note with this as well,  not all toppings will be available at every Menchie’s location. I didn’t see the Bursting Boba toppings available yesterday and those are one of Chloe’s favorites. She usually builds a fruity sorbet cup and goes with colorful toppings such as boba and gummy candies.

Insider tips:

  • Do not go too crazy with different flavors and toppings. Think things through and really think to yourself, “is this going to taste good?” If your Menchie’s does not taste good, you are probably to blame.
  • They charge by weight so if you want to keep it on the cheap side do not out an enormous amount of froyo in your cup. Also, stick to light toppings like candy sprinkles, whipped cream, etc.
  • They have a lot of gummy candy toppings to choose from but keep in mind that your froyo is FROZEN yogurt so once that gummy candy sits there on top of your creation for a bit it does tend to get on the hard side, as opposed to soft like a gummy candy should be.
  • I forgot to get a photo of the liquid toppings available like marshmallow and hot fudge. It is a good idea to put this on your froyo BEFORE the toppings.
  • Menchie’s does offer a rewards program, known as My Smileage, so you can save on frozen yogurt once you reach a certain amount of money spent. Once you reach 50 Smiles (spend $50) you get a $5 reward. Just for signing up they start your account with 25 Smiles.
  • Don’t forget Menchie’s for your next celebration. They do offer frozen yogurt cakes!

How can Menchie’s improve?

  • Orange Leaf is a froyo competitor and they offer little paper dividers for your cup so different flavors and prevented from blending together.
  • Offer breakfast flavors as a regular option. Last year Orange Leaf offered a line of breakfast flavored froyo like pancakes w/ syrup, Fruity Pebbles, etc. The breakfast flavors are my favorite. Keeping these flavors as a permanent offering would be fabulous. I would even visit in the morning for a breakfast treat if those flavors were always available.
  • Rearrange the stations just a bit. The liquid topping area is at the end of the self-serve area. I think it just makes sense to put hot fudge, etc. on top of your froyo BEFORE you put the cute little toppings on. When you put this on last it smothers your creation.

Final thoughts

I hope my Menchie’s review has opened your eyes about this unique place to visit. The possibilities really truly are endless! You can get creative at Menchie’s with the HUGE toppings bar that they have. There is a wide variety of toppings and sauces for your frozen yogurt creation. It is also a very family-friendly place. Your children will love Menchies… I guarantee it!

I Tried The Gourmet Candy From Sugarfina Cereal Collection & Here Are My Thoughts – Sweets For The Sweet!

I have been virtually drooling all over the line of Sugarfina items that I have seen online for years now. The reason I didn’t get a chance to try it out until now? Let’s be honest the price of this candy is astronomical. I was blessed with a nice big fat Nordstrom gift card recently so that I how I ended up finally splurging on Sugarfina. I went with the Sugarfina Cereal Collection Favorites Candy Gift Set. The price of this gift set is going to set you back $34.90 but if it makes your taste buds jump for joy and give you a foodgasm the price tag just might be worth it.

It felt like Xmas morning when the delivery man brought this package to me. I opened up the box. It was actually packed quite well to ensure that it wouldn’t arrive broken. But much to my surprise both bars were snapped in half when I took them out of their pretty packaging. You can see below in the photos what I mean. Yes, I was quite sad and I did end up calling up Nordstrom customer service. The customer service agent that I spoke to was super helpful with my dilemma that I had reported and he told me that he would send out another package to me, this time hopefully the bars would be in a beautiful and intact state. I don’t blame Nordstrom and I don’t blame Sugarfina for this mishap. I blame UPS. They throw packages onto porches without a thought in the world that maybe, just maybe there is something delicate and fragile contained in the box.

Despite the broken bars I still felt pretty freaking awesome to have this gorgeous candy in my possession. To me, it is pure eye-candy CANDY! Just look at it. The gift set included more than just the two candy bars (Froot Loops bar and a Lucky Charms bar). The set also came with little ball-shaped candies~ Fruity Loops and Cinnamon Crunchies. The Fruity Loops definitely did remind me of the colorful & sugary cereal Froot Loops. The Cinnamon Crunchies were like eating Cinnamon Toast Crunch, only better.

After giving all the candies a whirl I see why they are considered gourmet. The taste of each candy was exquisite and divine. The taste transported me to some kind of weird state of food euphoria!

This morning I would love to share with you about my experience with the Wilton Easy Layers cake set and how I made my gluten-free cotton candy cake. I blogged about this cake pan set on a recent Friday Faves post and I ended up ordering myself one and I am so happy that I did. I ended up creating the best cake I have ever made in my life yesterday! I am truly proud of it and I was happy to serve it to my mother, who came over for a t-bone steak dinner. The cake that I made was the most perfect dessert to serve to her and she fell in love with it. And of course, my daughter, Chloe, was absolutely in love with this cake. She assisted me in making it and it is always a joy to work alongside her in the Give It A Whirl Girl Kitchen.

Here is how I made my gluten-free Cotton Candy Cake

Here is how I used Wilton Easy Layers Cake Pan Set

The Wilton Easy Layers contains 5 pans that are 6 inches in diameter. They are pretty shallow pans. They have a non-stick coating but I still sprayed mine with a bit of coconut oil just in case I had a problem with my cake sticking. The pans will fill up one standard size serving of cake batter. These cake pans will also all, conveniently, fit inside the oven at the same time due to their small size.

Pamela’s Gluten-Free Vanilla Cake Mix

The cake itself was made with a gluten-free mix by Pamela’s. I used Pamela’s Vanilla Cake Mix. I have used this mix once before for cupcakes and I was very satisfied with the taste and texture. What I also love about the gluten-free mix is that it is non-GMO, uses no artificial colors or flavors, no preservatives, and no high fructose corn syrup.


Lorann’s Cotton Candy flavor oil

I achieved the cotton candy flavoring using a bottle of Lorann’s Cotton Candy Flavoring Oil. This was my first time using a flavoring oil of this kind and I heard that a little bit can go a long way but I ended up having to use about half of the bottle to get the flavor I was going for. I really enjoyed the flavor of this, though it was not exactly like cotton candy. I will have to explore other flavor oils and extracts from this brand because I am just not a plain vanilla person.

How I created the frosting for this cotton candy cake

For the frosting, I decided to go with a homemade buttercream. I had a fridge full of different kinds of butter from Chef Shamy so I gave the Honey Butter Vanilla Bean a whirl. Chef Shamy serves up a high-quality butter with no weird ingredients… just pure butter. It is also gluten-free. This particular vanilla flavor produced the most glorious buttercream I have ever whipped up. I used Simple Truth Organic Powdered Sugar with the butter and a few splashes of almond milk. The flavor of this buttercream was out of this world. If I had to give myself a grade it would be an A+. It really was that great!

Coloring the cotton candy cake

Now let’s get on with the color. Yes, this time around I was naughty and used artificial colors… GASP! It’s true that I did. I’m not proud but sometimes you gotta do what you gotta do and YOLO! I used Betty Crocker’s Neon Gel Food Colors for the pink and the purple. Gel food coloring is some pretty potent and powerful stuff. They really do produce gorgeous coloring on your creations. I don’t know why but for the neon pack they do not include the color blue, so for that, I used a Kroger brand neon blue. I am so pleased with how the colors turned out!

A ton of candy to top it all off!

And for that gorgeous candy that is all over the cake? I created my own mix of sprinkles with several different brands. The sprinkles with the big bits are pieces of candy that were from Celebrations By Frey. My local Kroger store sells them but I can not locate them on Amazon. The bottle of sprinkles is titled MixLicious.

Final thoughts on this gluten-free cotton candy cake

I am super duper pleased as pie (or should I say “cake”) with how this cake turned out and I was proud to serve it to my family. It really did taste as good as it looks. I am not a professional baker so I am aware that the cake is a little sloppy but I am always working towards bettering myself as a chef and as a baker.

This cake was so incredibly fun to make with my daughter and I could do this every single day if I had the funds (and if I wanted to be on 600lb Life). I am going to definitely be working on more cakes in the future and I might even get brave and give fondant a try. I love the way fondant cakes look. They are edible art! The beautiful cakes that I see on Instagram and on food blogs are so inspiring.

Baking is hard. Not just hard but difficult. I get a vision in my mind and I want to create it. I know exactly how I want it to look and exactly how I want it to taste. Does my wish for this charming and glamourous cake become a reality for? Kinda sorta in this case. It looks so very amateurish and you want to know why? I am an amateur. I am a newbie on the food scene. I am a food blogger but I never tout myself as being a professional in any sort of way. For me, this blog is about the whole entire learning process of cooking and baking and food exploration. I am completely self-taught and I am learning something new every single day on this journey. Today I baked a bubblegum cake. I had that vision in my mind. However, things did not go exactly as planned.

Let’s see here… my buttercream was way too thin and runny and it was just DROOLING off the sides of the cake. I had a brand new, nifty smoothing spatula that I thought would result in perfect icing… nope! I knew my buttercream was too thin and I didn’t have any powdered sugar left to stiffen and thicken up. Cries! So a girl’s gotta do what a girl’s gotta do. I had to work with what I had on hand and make the most of an unfortunate situation.

For this cake, I used a cake mix. I am in love with Pamela’s Classic Vanilla Cake Mix. This was my second time using this mix and I am so pleased to say that this is a fabulous mix. The last time I used this mix I made a Gluten-Free Cotton Candy Cake. Click this LINK to learn more about that. It was scrumptious!


How I got the bubblegum flavor with Lorann’s Oils

This was my second time using Lorann’s Oils to flavor my cake. This time around I used the bubblegum flavor. This oil is potent stuff and a little bit goes a long way. My house sure smelled bubblegummy from baking this cake. What a wonderful scent! I have never experienced a scent like that in my home before. Just marvelous! I wish my house stunk like bubblegum all day every day!


How I colored the bubblegum cake

I used a rose and teal color to dye my cake. I am in love with the color teal and I was really impressed with how vibrant the color was and that is was actually teal and not just blue! The rose color also lent a stunning pink color to the cake. Yeah yeah… artificial colors. I really don’t know what’s come over me. I try to go natural as much as possible and I’ve been slipping up recently but I’m really just having so much fun!

I know I have already inspired at least one of my friends to check out that place. I got my gorgeous, pearlescent gumballs there. I knew what I needed and was able to grab exactly what I needed from the bins. I am also so very grateful that I grabbed a pink lollipop to put smack dab in the center of my cake. A 5-tier layer cake needs support and the lollipop helped to be a dowel of sorts to prevent it from slipping away on me. The sprinkles came from a couple places: Michael’s and Mile’s Cake and Candy Supply. I got a delightful jar of Wilton Diamond Medley from Michael’s (woohoo and thank goodness for those coupons). The little rainbow hearts were from Mile’s. They have a wide variety of sprinkles to choose from

Sugarfina was an extra splurge!

And to make it a little more extra special I also topped it with Sugarfina Fruity Loops. They came from the Sugarfina Cereal Collection that I treated myself too. They are to die for yummy yummy yummy!

Having fun is what matters most! 

You know what? Even though my cake looks like it was made by an inept and unskilled baker I am really truly proud of it. I wish I could send a virtual slice of this cake through your screen because the taste would blow your mind. I am calling this cake, Let’s Get The Party Started”. There is no party happening here… not a party in sight. But you know what I want to celebrate today? Life! I have been feeling incredible the past two months since I started this food blog. I feel so revived and renewed. I feel like a whole new better ME. That is enough reason for me to bake a cake and celebrate! I’m also going to give myself an A for effort because I really did work my booty off on this creation!

RECIPE -Cinnamon Churro SmashMallow Stuffed Plantain

You all know me! Trying out new foods all the time. This time around I had the chance to try out a plantain for the first time, AKA the “ugly bananas”! I ran into Kroger with my daughter to pick up some ingredients for some homemade popsicles that I will be creating this week. We were checking out the exotic fruits and a big plantain made its way into my shopping basket. I only purchased one. I had no clue what I was going to do with it but I wanted to bring it home anyway. I got home and did a bit of research on plantains. You do not want to eat these things raw. I did discover that these are best prepared cooked because if you bite into a raw one you are going to experience a bitter taste. You will not get sick eating a raw one but you will likely regret the taste in your mouth! I needed to figure out a plan of action with the plantain. I was sent a variety pack of SmashMallows to review. I already have a special recipe post drafted up for National S’mores Day (August 10th) featuring these yummy marshmallows. So I figured I could somehow incorporate the Cinnamon Churro flavor with the plantain. I made a roasted s’mores banana earlier this year and it turned out fantastic! I had the idea to use my plantain with the SmashMallows and roast it all up. I sprinkled some unsweetened coconut on it and a bit of cinnamon and cardamom.

I could not wait to tear into this when it popped out of the oven! I really enjoyed the taste of the plantain combined with the SmashMallows. After roasting the plantain for 13 minutes it had softened and was the perfect texture to eat.

Ingredients:

  • 1 plantain
  • 6-8 Cinnamon Churro SmashMallows (or as many as you can cram inside!)
  • Tablespoon of unsweetened coconut
  • Sprinkle of cinnamon
  • Sprinkle of cardamom

Recipe:

  1. Preheat oven to 375 degrees
  2. Slice the plantain down the middle but not completely. Leave a little space at top & bottom.
  3. Stuff the plantain with the SmashMallows. I used a teaspoon along the sides to spread it open.
  4. Top with unsweetened coconut, cinnamon, and cardamom.
  5. Place the stuffed plantain onto a baking sheet or pan and wrap it up with foil, leaving an opening at the top.
  6. Roast for 13 minutes (or until the SmashMallows get a golden crust on them).
  7. Enjoy!

This sure was a great dessert for my daughter and me to share. Of course, she loved the ooey, gooey toasted marshmallow part the most. I ended up being the one to eat most of the plantain. That was perfectly fine with me. I am really happy that I finally gave the “ugly banana” a whirl. I have seen those plantains around for ages and have always been so curious about them.

Tidbits of information on the plantain:

  • 1 medium cooked plantain contains approximately 230 calories.
  • 1 medium plantain has appx. 4.6 grams of fiber.
  • Plantains are rich in Vitamin A, Vitamin C, and potassium.
  • Plantains come from several parts of the world: West & Central Africa, the Caribbean Islands, Central America, and coastal parts of South America.
  • If you are following a paleo diet plantains are ok to eat. They are starchy but considered a good source of carbohydrates.
  • When the plantain gets brown/black it is at its peak stage of ripeness. This is when it is the most sweet.
