Time to get pumped up about this energy ball recipe that I created using Betsy's Best Toasted Coconut Cashew Butter. You can use the nut butter of your choosing but this particular one by Betsy's Best will give you maximum flavor. This recipe included toasted coconut, toasted almonds, and chia seeds, along with gluten-free oats. Mini chocolate chips OPTIONAL (I recommend Enjoy Life Foods).

Toasted Coconut, Almond, & Chia Energy Balls No-Bake RECIPE
Instructions
  1. Gather all of your ingredients for this recipe.
  2. Warm 1 tablespoon of coconut and allow it to melt. Once melted, toast the coconut flakes and the slivered almonds until fragrant and golden. Use a medium heat setting.

  3. Place the oats, nut butter, toasted coconut, toasted almonds, maple syrup, and chia seeds into a food processer. Use the high setting to incoroporate all of the ingredients. They will ball up in the food processer.

  4. Once ingredients have been processed, remove the mixture and place it in a mixing bowl.

  5. If you want to add some mini chocolate chips to your energy balls you can do that at this point. (OPTIONAL)
  6. Using clean hands, you can take enough mixture to make a 1-inch energy ball and roll it together with your hands until smooth.
  7. You should have appoximately 14 energy balls now. Refrigerate to maintain freshness.
  8. Serve, eat, and enjoy!

    • Mixing Bowl
    • Soft Spatula


SWAP! Feel free to swap out the maple syrup for some raw honey. It won't be vegan with the honey but it will be sweet and tasty!

Believe it or not, this method works to make a dairy-free cheesecake. That little bit of lemon juice that you add will magically transform these ingredients into cheesecake heaven!

Let it be known that making these cheesecakes are one of my favorite things to do in the Give It A Whirl Girl kitchen. These desserts are rich, flavorful, and actually quite nutritious. They are a much better alternative to regular cheesecake. The basic ingredients in these are fruit (medjool dates) and a variety of different nuts (mostly cashews). I am not going to lie, sometimes I even sneak in a slice for a filling breakfast.

This dessert is unique in its flavor. If you are a fan of matcha (green tea) this recipe might just be perfect for you. I love everything about this particular one: the crust, the filling, and the chocolate ganache on top. It all marries together harmoniously to make one hell of an awesome vegan cheesecake.

I just recently had a chance to sample three different flavors of Skinny Dipped Almonds. I tried out the Dark Chocolate Cocoa, Greek Yogurt Pumpkin Spice, and the Dark Chocolate Peanut Butter. Sunday kicked off with some healthy dessert making in the kitchen. I had a craving for something white chocolate & raspberry so I made a paleo cheesecake. I absolutely love making any kind of dessert but for me, paleo is my favorite kind to whip up because it is a fairly new concept for me. I am trying my best to get a grasp on paleo and gluten-free baking & cooking. Every day is a learning experience in the kitchen. Today I am going to talk about my experience and my process of making the cheesecake that I created yesterday.

Ingredients for the oats:

1 cup of gluten-free oats (I used Bob's Red Mill Quick Cooking Oats) 1 cup of dairy-free milk (I used Pacific Organics Unsweetened Vanilla Hemp Milk) 1 tablespoon of pure maple syrup Ingredients for the jam:

1 1/2 cups fresh berries (I used raspberries, blackberries, and blueberries) 2 tablespoons of chia seeds 1 tablespoon of raw honey splash of fresh lemon juice Ingredients for the almond butter:
