How I Created These Colorful, Super Duper MOIST Cake Balls With Instant Pudding Packets

This past weekend was Mother’s Day weekend and I wanted to do something special to celebrate it. My husband and I had some kid-free time and we came up with the grand idea of creating these Super Duper Moist Cake Balls together! Ok, I lied, it was actually ALL my idea and I just employed his help. Does that mean I can call him Give It A Whirl Boy since he helped me with one of my blog projects? Keep reading to find out how I added a secret ingredient to make these cake balls the moistest cake balls you ever did have.

Here is how I created these Super Duper Moist Cake Balls

The secret ingredient is…

Want to know what my key ingredient is with any cake mix I ever use? Sugar-free instant pudding packets from Jell-O! Yup, and I use the whole entire packet. For these two batches of cake balls that I whipped up, I used one packet of sugar-free cheesecake pudding for the pink and blue balls, and for the green cake balls I had to use my favorite pudding mix, pistachio pudding (sugar-free as well). I always opt for any of the sugar-free pudding packets since I think it is unnecessary to add even more sugar to the cake, but you can feel free to use any pudding packet your heart desires.

Baking the cake

First things first! For these Super Duper Moist Cake Balls, you need to decide on a boxed cake mix to use. I went with Betty Crocker’s Super Moist Rainbow Chip mix. I created two batches of cake balls so I needed two boxes of cake mix. To add a much-loved moist cake ball you then need to choose a pudding mix. You will also need to choose a can of frosting that you would like to mix in to hold these balls together. I used Betty Crocker’s Rainbow Chip frosting.

Make sure you have some decent bakeware to use! I love my Circulon nonstick set.

PRO TIP!

The cake mix calls for 1/2 cup of oil. I used ghee (butter) instead and they came out marvelous!


I used a 9×13″ cake pan and baked the cake for 28 minutes. After the cake cools I then scrape the top and middle part away and pour the crumbled cake into a large mixing bowl. I do not use the bottom part of the baked cake because it has that baked texture to it. The top of the cake has plenty of that baked texture to it and that is plenty for cake balls. You will want to crumble all of the cake into the smallest pieces. You do not want large cake pieces in your mixing bowl.

Frosting to hold them all together

The frosting is what you will be using to hold these balls together and to give them a big punch of sweetness for that sweet tooth of yours. Once you have all of the cake crumbles in the large mixing bowl, add 3/4 of the frosting to the bowl and mix it all up until well incorporated. I use a soft spatula to do this. You might need to use the entire can but I do not recommend it. This is going to take a bit of muscle to stir this all up so pull up your sleeves and get ready to mix, mix, mix!

After the cake and frosting is completely mixed you will want to make sure you have VERY CLEAN hands and you will want to take the mixture with your hands and form 1-inch cake balls

Chill them balls!

After you form those cake balls with the cake crumbles and frosting you will want to freeze the balls for a short period of time. 15 minutes is plenty! Just be sure that you do not freeze them for too long. You don’t want them completely frozen.

Oh my goodness! Who here remembers this show The State? Truth be told, that while my hubby and I were working on these balls there were some humorous injections pertaining to balls jokes! Yeah yeah… I am 38 years old and still haven’t grown up! lol!

Anyway…

You will need to choose some candy melts to dip your balls in. I went with the Wilton Candy Melts. I was able to locate the new Brights colors and got bright pink, bright green, and bright blue.

Sprinkles galore!

Hello and welcome to the fun part of this post! Here is where we get a bit messy and have a bit of a sprinkle explosion. You can get creative here and use the sprinkles of your choice to decorate these Super Duper Moist Cake Balls! I had a wide variety of many different rainbow sprinkles on hand so my moist cake balls have a lot going on.

Final thoughts

Boy! These Super Duper Moist Cake Balls sure were a labor of love and completely and totally worth all the time and effort put into making them. My family came over after Mother’s Day dinner and we played cards and ate cake balls! These moist cake balls were enjoyed by all, both children and adults. They are a joy to eat, that is for sure! How many will you eat? Always remember to save room for dessert!

RECIPE – Devil’s Food Vegan & Gluten Free Donuts – To Die For Goodness

I have a confession to make. I am addicted to my donut pan! I picked one up last weekend at Mile’s Cake and Candy Supplies in Clinton Township and I am so glad that I did. It is so much fun to work in the kitchen with my daughter making these healthy-ish gluten-free baked donuts. I went with a 6-cavity donut pan from Wilton. Wilton is a trusted source when it comes to baking supplies so I felt very confident purchasing this pan for the Give It A Whirl Girl kitchen. I did not use this pan for the recipe below but it would be best going with this pan. I used a flexible heart-shaped silicone mold with the donuts in the recipe and they were difficult to remove from the mold. So trust me here, go with a Wilton pan. You will thank me later. The cooking times are the same for either pan.

We went a little overboard decorating these devil’s food donuts. We gave these donuts a generous sprinkling from 3 different jars of rainbow sprinkles. Why? Because variety is the spice of life. Gotta have my sprinkles right?!! We did not eat these sugar skulls, they were just for decoration.

Instead of using an actual egg we created our own “eggs” with ground flaxseed. For these you place 4 tablespoons of flax in a coffee grinder and grind them up. When these 4 tablespoons of ground flax are married to a half-cup of water this results in an egg-like mixture. Just whisk away and wallahh… flax eggs! They are vegan and paleo friendly. You can also do the same with chia seeds. So if you are ever out of eggs just bust out your flax or your chia and make your own eggs!

Devil’s Food Chocolate Vegan & Gluten Free Donuts

Some of the ingredients I used and also a heart-shaped donut pan from FoodStirs

Ingredients:

  • 1/4 cup coconut flour (I used Arrowhead Mills)
  • 1/2 cup cacao powder (I used Livfit)
  • 1/4 teaspoon baking soda
  • Sprinkle Himalayan salt
  • 1/3 cup coconut oil (I used Spectrum)
  • 3 tablespoons maple syrup (I used Simple Truth)
  • 4 tablespoons flax seed (I used Arrowhead Mills)
  • 1/2 cup water
  • 1/2 cup vegan dark chocolate chips (I used Enjoy Life)
  • 1 tablespoon coconut oil.

Your flax “egg” will have an egg-like consistency after soaking in water a few minutes.

Recipe:

  1. Preheat the oven to 350 degrees.
  2. While oven is heating up prepare your flax “eggs”. Place 4 tablespoons of flaxseed into a coffee grinder and grind them up. Place grounded up flax into a bowl and add 1/2 cup water. Whisk it up. Allow it to sit for a few minutes and it will get an egg-like texture.
  3. Work on dry ingredients first. Place coconut flour, cacao powder, baking soda, and salt into your stand mixer and mix until well combined.
  4. Now for the wet ingredients… add your flax “egg” mixture, coconut oil (1/3 cup), and maple syrup. Mix until well incorporated.
  5. Fill donut pan cavities up 2/3 of a way to the top of the mold. They will puff up while baking in the oven.
  6. Bake for 16-18 minutes at 350 degrees.
  7. Remove donuts from the oven and allow to cool.
  8. Prepare your chocolate glaze by placing 1/2 cups of chocolate chip and 1 tablespoon of coconut into a bowl. Microwave in 15-second increments. Continue stirring the chocolate and oil until completely melted.
  9. Dip your donut in the glaze. Allow it to see a few minutes for the glaze to set up.
  10. Eat and enjoy!

Bubblegum Cake! This Is My Gluten-Free Let’s Get The Party Started Cake With Pamela’s Vanilla Cake Mix (REVIEW)

Baking is hard. Not just hard but difficult. I get a vision in my mind and I want to create it. I know exactly how I want it to look and exactly how I want it to taste. Does my wish for this charming and glamourous cake become a reality for? Kinda sorta in this case. It looks so very amateurish and you want to know why? I am an amateur. I am a newbie on the food scene. I am a food blogger but I never tout myself as being a professional in any sort of way. For me, this blog is about the whole entire learning process of cooking and baking and food exploration. I am completely self-taught and I am learning something new every single day on this journey. Today I baked a bubblegum cake. I had that vision in my mind. However, things did not go exactly as planned.

Let’s see here… my buttercream was way too thin and runny and it was just DROOLING off the sides of the cake. I had a brand new, nifty smoothing spatula that I thought would result in perfect icing… nope! I knew my buttercream was too thin and I didn’t have any powdered sugar left to stiffen and thicken up. Cries! So a girl’s gotta do what a girl’s gotta do. I had to work with what I had on hand and make the most of an unfortunate situation.

For this cake, I used a cake mix. I am in love with Pamela’s Classic Vanilla Cake Mix. This was my second time using this mix and I am so pleased to say that this is a fabulous mix. The last time I used this mix I made a Gluten-Free Cotton Candy Cake. Click this LINK to learn more about that. It was scrumptious!


How I got the bubblegum flavor with Lorann’s Oils

This was my second time using Lorann’s Oils to flavor my cake. This time around I used the bubblegum flavor. This oil is potent stuff and a little bit goes a long way. My house sure smelled bubblegummy from baking this cake. What a wonderful scent! I have never experienced a scent like that in my home before. Just marvelous! I wish my house stunk like bubblegum all day every day!


How I colored the bubblegum cake

I used a rose and teal color to dye my cake. I am in love with the color teal and I was really impressed with how vibrant the color was and that is was actually teal and not just blue! The rose color also lent a stunning pink color to the cake. Yeah yeah… artificial colors. I really don’t know what’s come over me. I try to go natural as much as possible and I’ve been slipping up recently but I’m really just having so much fun!

If you are wondering where the candy is from I will fill you in. I made a pit stop over at Roger’s Bulk Candy & Ice-Cream specifically for the candy on this cake. I love that store. I know I have already inspired at least one of my friends to check out that place. I got my gorgeous, pearlescent gumballs there. I knew what I needed and was able to grab exactly what I needed from the bins. I am also so very grateful that I grabbed a pink lollipop to put smack dab in the center of my cake. A 5-tier layer cake needs support and the lollipop helped to be a dowel of sorts to prevent it from slipping away on me. The sprinkles came from a couple places: Michael’s and Mile’s Cake and Candy Supply. I got a delightful jar of Wilton Diamond Medley from Michael’s (woohoo and thank goodness for those coupons). The little rainbow hearts were from Mile’s. They have a wide variety of sprinkles to choose from

Sugarfina was an extra splurge!

And to make it a little more extra special I also topped it with Sugarfina Fruity Loops. They came from the Sugarfina Cereal Collection that I treated myself too. They are to die for yummy yummy yummy!

Having fun is what matters most! 

You know what? Even though my cake looks like it was made by an inept and unskilled baker I am really truly proud of it. I wish I could send a virtual slice of this cake through your screen because the taste would blow your mind. I am calling this cake, Let’s Get The Party Started”. There is no party happening here… not a party in sight. But you know what I want to celebrate today? Life! I have been feeling incredible the past two months since I started this food blog. I feel so revived and renewed. I feel like a whole new better ME. That is enough reason for me to bake a cake and celebrate! I’m also going to give myself an A for effort because I really did work my booty off on this creation!

I have recently fallen head-over-heels in love with baking. It is something that I am very passionate about. I know the appearance of my baked goods is not yet top notch like a professional’s work. My baking technique is something that I am determined to perfect so someday I can have some drool-worthy looking goodies. I will say this, though, the flavor is usually spot-on and I do nail that! Some will say that is all that matters but I also want my baked goods to look more visually appealing.

KitchenAid Mixer Professional 6 Quart in Guava Glaze

I already have a KitchenAid mixer on my countertop and it has a permanent home there. I have the smaller one with a black, glittery finish. I would consider a stand mixer an essential item for a person who is serious about baking. These mixers are heavy duty and designed to last a lifetime. How pretty is this pink (Guava Glaze) color? Love!

A hand mixer is another essential tool for the at home baker. These will help combine ingredients. This particular KitchenAid model comes in 5 speeds and is also available in a huge variety of colors. This Green Apple color just so happens to be my favorite.

This immersion hand blender comes in a variety colors. It has an ergonomic handle and can perform different blending techniques. These are a great kitchen gadget that can also help with other tasks in the kitchen and not just used for baking.

Circulon 10 Piece Bakeware Set

I own a set of Circulon bakeware in the chocolate color and I am totally impressed with the quality. Their line has a truly wonderful non-stick coating on it and I have never had any problems getting my items to come out of these pans. This set is wonderful for getting you started on your baking journey and I love that this set includes a cake pan with a cover.

Fat Stack of Gluten-Free Pancakes With Enjoy Life Foods – Product Review, Recipe, & Giveaway – CLOSED

Yesterday and the day before were both dreary, overcast days in Michigan. I really needed a plateful of something to cheer me up. In times of need, we often turn to comfort food. Pancakes, for me, definitely fit the bill for that! I also decided to inject some color to them for added smiles! I have been opting for more gluten-free food products in my diet. I have been feeling a whole lot better both physically and mentally. I have been keeping track of my diet and I have come to the conclusion that gluten somehow affects my mood and I often feel run down and fatigued. So for now I am just doing my best to avoid it and keep my gluten intake at a minimal amount.

I am a big fan of Enjoy Life Foods products. I am currently obsessed with the dark chocolate chips and it is the only brand I buy now. They offer a line of gluten-free, vegan, products that are free from several other allergens (wheat, peanuts, tree nuts, dairy, casein, soy, egg, sesame, sulfites, lupin, mustard, fish, shellfish & crustaceans). Their products are created in an allergen-free facility. You can enjoy their foods with confidence that they will do your body good.

I tried out the Enjoy Life Foods pancake and waffle mix a couple times before and my daughter and I loved the finished product. They don’t hold up well for waffles but they do make a wonderful pancake. The taste of these pancakes was on point! I would never even know they were gluten-free because they taste just like regular pancakes.

I wanted to amp it up a bit so I swapped out the water and used Bolthouse Farms Unsweetened Plant Protein Milk instead. An 8 oz serving of this milk is a whopping 10 grams of protein. I also used a mashed banana in the mix to add in some fiber. A banana has approximately 3 grams of fiber.

I also added some Simple Truth natural food coloring to the pancake mix. I am not a fan of artificial dyes in my food so I wanted to give this a whirl. Unfortunately, the colors are not as vibrant as the artificial ones but they are still fun to eat. Next time I make these I will experiment more with the amount I use (probably needed to use more). The batter was colorful and bright but when the pancakes were cooked the color faded. Perhaps you will have more luck with the colors!

  • 1 1/2 cups Enjoy Life Pancake & Waffle Mix
  • 1 1/2 cups Bolthouse Farms Plant Protein Milk
  • 2 tablespoons coconut oil
  • 1/2 mashed banana
  • Simple Truth Natural Food Color
  • Pure maple syrup (optional)
  • Candy Sprinkles (optional)

Recipe:

  1. Prepare your batter by placing the mix, milk, and oil into the bowl and stir until no lumps remain.
  2. Mash 1/2 of a ripe banana and then incorporate this into the mix.
  3. Using 6 bowls, place a small amount of batter into each bowl and add food coloring to each bowl until you have red, orange (red & yellow combined), yellow, green (blue & yellow), blue, and purple (red & blue).
  4. Warm up a tiny bit of coconut oil in a pan, just enough to give it a thin non-stick coating.
  5. Place the batter into the skillet or griddle one color at a time. You may have to do a couple batches to get all 6 pancakes cooked. I used two large skillets simultaneously with 3 colors in each pan.
  6. Cook the pancakes on a medium setting. Flip the pancakes when the edges are noticeably formed. After flipping continue cooking until thoroughly cooked.
  7. Remove pancakes from pan and top with maple syrup and/or candy sprinkles. Enjoy!

Our Visit To Roger’s Bulk Candy & Ice-Cream – Because Sometimes A Girl Just Needs To Have Fun

We have all heard the expression, “You will feel like a kid in a candy shop”. Yesterday I was that kid in the candy shop! Last night I came up with the grand idea to visit Roger’s Bulk Candy and Ice-Cream in Eastpointe, MI. As you may already know I often promote a healthy lifestyle and a healthy diet. I believe in living your life and having fun every once in a while though. I feel that eating should be all about BALANCE. I regularly opt for healthy meals but sometimes I like to just cut loose and enjoy whatever the heck I want.

I heard about Roger’s Bulk Candy and Ice-Cream on the news just recently. I could not believe that I lived in the area of this place for so long and had no clue that it even existed. When you first step foot inside you will see an explosion of color, candy, and the huge variety of ice-creams that are available. This place just looks absolutely fun from the first moment that you get a peek inside. This place is floor to ceiling candy wherever your eyes looks.

This was a very exciting excursion for my 8-year-old daughter, Chloe. We ended up going there on a whim and planned it out as a surprise for her. We did not tell her where we were going, we just drove over there.

We had a blast walking around the store and looking at all of the candy that you can help yourself to. It is a bulk candy shop and the candy is sold by weight so you can buy as much or as little as you want. If your sweet tooth is calling, this is the place to be.

Roger’s has been in business for 12 years now. They have over 500 types of candy and they have something for everyone. Seriously, if you have a problem finding a candy to take home with you then maybe you have a problem lol! Most of the candies here are nostalgic candies that date back to your childhood. Seeing these candies sure did bring in a tidal wave of memories!

We ended up getting a little variety bag of sour candies. Then it was time to figure out what we were going to get at the ice-cream area of the shop. There is a huge assortment of ice-cream available and if you are seeking out something a little healthier, Roger’s does offer smoothies made with fresh fruit.

We decided we would order a banana-split and share it. This was no ordinary banana-split either. We did not go with the basic vanilla, chocolate, and strawberry. We wanted a colorful, Instagram-worthy banana-split with some fun flavors. We chose Superman, cotton candy, and anniversary cake. We had the usual toppings on it: strawberry (on the Superman), pineapple (on top of the cotton candy), and chocolate (topping for anniversary cake). We really were not sure how this would all pan out but this really did come together as a memorable banana split that we all enjoyed!

If you are local to this spot definitely stop in and give it a whirl! This was a wonderful experience for all of us. We also really enjoyed the helpful and friendly staff. Roger’s Bulk Candy & Ice-Cream will surely put a smile on your face.
