This dish was created with a chuck roast, carrots, parsnips, and one really huge turnip! This paleo pot roast gets its fabulous flavor from one of my favorite seasonings, Herbs de Provence. Not only is this meal pure comfort food on a plate, but this paleo & gluten-free dinner is simple to create at home.

Roast preparations

First things first though. Let’s discuss this Root Vegetable Pot Roast from the beginning. The meat is the highlight of the meal after all. The first thing I do for a slow-cooker roast is salt and pepper that slab of meat, throw it on a hot saute pan with olive oil, let it sizzle and brown. When you brown your meat you lock in the juice of the meat and your meat will be so tender when dinner time rolls around. I used a small 2 pound roast for this recipe but I believe you could use any chuck roast up to three pounds. Instructions
Crust
  1. For the crust, you are going to use a food processor and place all CRUST ingredients in the food processor and blend them on high until all ingredients are incorporated. This will be thick and it needs to be spread out evenly on a parchment paper lined 9" springform pan.
Filling
  1. Place all of the filling ingredients (except for the one cup of sauce, reserve that for a bit later) into the food processor. Blend up these filling ingredients until smooth. You may need to stop the food processor and stir the ingredients with a soft spatula.
  2. Once the filling is smooth, place the filling into a medium sized bowl. Stir in one cup of fresh paleo cranberry sauce.
  3. Smooth the filling out evenly on the crust. I use a soft spatula to smooth out the filling.
  4. Refrigerate the filling and crust for 6 hours.
Topping
  1. Remove the cheesecake from the refrigerator and place the cranberry sauce and the pecans on top with whatever design you would like. I did a bullseye design with my sauce and my nuts.
  2. Slice, serve, and enjoy!

Please keep refrigerated to maintain freshness.

Pumpkin pie spice can be subbed in for the seasonings if you do not have them.

Paleo Cranberry Apple Sauce With Pecans RECIPE
Instructions
  1. Start out by pouring one 2lb bag of fresh cranberries into a slow-cooker. Set it on low for 6 hours.
  2. Zest one whole orange and place zest into the slow-cooker.
  3. Chop the orange in half and squeeze all of the juice out and place it in the slow-cooker.
  4. Pour maple syrup into the slow-cooker.
  5. Add the pecan pieces to the slow-cooker.
  6. Add the spices to the slow-cooker (cinnamon, cloves, cardamom, and allspice).
  7. Give it all a good stir and incorporate all of the ingredients.
  8. Cook on low for 6 hours or high for 4 hours.
