This recipe is for my highly addictive gluten-free oatmeal chocolate chip energy balls. I used gluten-free oats, Justin's Cashew Butter, and Enjoy Life Foods mini chocolate chips. This is a simple and easy to do recipe that anyone could do.

Bet You Can't Eat Just One! Oatmeal Chocolate Chip Energy Balls RECIPE by GIVE IT A WHIRL GIRL
Instructions
  1. Soak the pitted Medjool dates in hot water to soften them.
  2. Warm one tablespoon of coconut oil in a small saute pan. Once the oil has melted place the coconut flakes in the pan and warm them on medium until a golden color.

  3. Warm the nut butter in the microwave for 10-15 seconds in a microwavable bowl until soft and spreadable.
  4. Chop the dates up into small pieces. Place the dates, coconut, oats, nut butter, and raw honey into a food processor and process on high until all ingredients come together and are well-incoportated. The ingredients will ball up.

  5. Take the oat mixture and place it in a medium mixing bowl with chocolate chips and stir well.
  6. Using clean hands, take the oat and chocolate chip mixture and form one-inch balls. Place in a square pan. Once all balls have been created you can place them in the refrigerator for 15 minutes. You should have approximately a dozen balls.
  7. Serve, eat, and enjoy!

Instructions
Crust
  1. For the crust, you are going to use a food processor and place all CRUST ingredients in the food processor and blend them on high until all ingredients are incorporated. This will be thick and it needs to be spread out evenly on a parchment paper lined 9" springform pan.
Filling
  1. Place all of the filling ingredients (except for the one cup of sauce, reserve that for a bit later) into the food processor. Blend up these filling ingredients until smooth. You may need to stop the food processor and stir the ingredients with a soft spatula.
  2. Once the filling is smooth, place the filling into a medium sized bowl. Stir in one cup of fresh paleo cranberry sauce.
  3. Smooth the filling out evenly on the crust. I use a soft spatula to smooth out the filling.
  4. Refrigerate the filling and crust for 6 hours.
Topping
  1. Remove the cheesecake from the refrigerator and place the cranberry sauce and the pecans on top with whatever design you would like. I did a bullseye design with my sauce and my nuts.
  2. Slice, serve, and enjoy!

Pumpkin pie spice can be subbed in for the seasonings if you do not have them.

Attention all pumpkin spice lovers... you will love the paleo and vegan cheesecake that I created. I honestly do love and prefer this over your average pumpkin pie. This cheesecake is chockful of healthy ingredients and does not contain any added sugars. In this recipe, you will be using almonds and cashews. Believe it or not, this method works to make a dairy-free cheesecake. That little bit of lemon juice that you add will magically transform these ingredients into cheesecake heaven!

Let it be known that making these cheesecakes are one of my favorite things to do in the Give It A Whirl Girl kitchen. These desserts are rich, flavorful, and actually quite nutritious. They are a much better alternative to regular cheesecake. The basic ingredients in these are fruit (medjool dates) and a variety of different nuts (mostly cashews). I am not going to lie, sometimes I even sneak in a slice for a filling breakfast.

This dessert is unique in its flavor. If you are a fan of matcha (green tea) this recipe might just be perfect for you. I love everything about this particular one: the crust, the filling, and the chocolate ganache on top. It all marries together harmoniously to make one hell of an awesome vegan cheesecake.

There are so many ways you can make your own granola bars at home. Making my own is a fun, rewarding experience for me. I ask my 8-year-old daughter, Chloe, to help with the stirring because she has some good muscles for her age and you really have to give them a big stir with the spatula.

For these granola bites I used gluten-free ingredients and also paleo-friendly ingredients. No sugar was added to these, they are naturally sweet from the Medjool dates and raw honey. These are a great snack that you can just grab and go.
