Yesterday was a bittersweet day for me and my husband. My mom came over in the morning to pick Chloe up to go up–north (Oscoda, MI) to stay for two whole weeks. If you read my last post you would see that I stocked up on some interesting fruits at Meijer through the Instacart grocery delivery service. I ended up getting some nice produce delivered: bananas, dragon fruit, kiwi, starfruit, passion fruit, papaya, and a kiwano horned melon. You know what? We eat our mistakes here. Sometimes you end up with a happy accident. Well, that happened today! There were two obstacles that I had to overcome in the kitchen today. It was one of those days where everything seems to go wrong but in the end, it turns out alright.

This is one of my favorite breakfast recipes. I love the taste of peanut butter and jelly. It is a taste that takes me back to my childhood. PB&J is such a nostalgic flavor. This recipe will create 2 servings (or one very large serving) of overnight oats topped with naturally sweetened chia jam and almond butter. You will not have to use all of the jam and almond butter in your overnight oats. You can store those items and save them for future use.
