Today I am sharing with you a recipe that I recently came up with for a paleo, vegan, no-bake cranberry cheesecake. This gluten-free (and no refined sugars) recipe features my homemade cranberry sauce as the star of the show. I just recently posted the recipe for my paleo cranberry sauce on my blog and I used those cranberries to come up with this holiday dessert. This faux cheesecake is not only scrumptious and delicious but you can enjoy this cheesecake without all of the guilt! If you like a dessert that is a bit on the tart side then this cheesecake might just be for you.
How I created this wonderful Paleo Cranberry Cheesecake
The Paleo Cranberry Sauce
First things first! You will need a total of 2 1/2 cups of some fresh Paleo Cranberry Sauce for this cheesecake. I posted the recipe for this cranberry sauce on my blog and it is so simple and easy to create. This paleo cranberry sauce is free of refined sugars and is sweetened with pure maple syrup. You can make it with or without the apples. I did not use apples in the batch of cranberry sauce that I created for this cheesecake.
You may use the cranberry sauce of your liking but fresh is going to be best with this recipe. I have not tested it with a cranberry sauce from a can so I don’t know how it will turn out if you go with canned cranberry sauce. Fresh is also best because you can control the flavor profile of it. You can get creative with the cranberry sauce spices and you can also control the ingredients (you may or may not want apples and nuts in your sauce).

Paleo Cranberry Cheesecake Crust
For the crust of this paleo cranberry cheesecake, you will need some pitted Medjool dates, pecans, almond flour, finely shredded coconut, coconut oil, maple syrup and your spices (cinnamon, ground cloves, and cardamom). This crust will sort of ball up in the food processor and become a thick, sort of sticky mixture. To create the crust you simply just take the crust mixture and press it firmly and evenly into a springform pan.
This crust made with all-natural ingredients gives your paleo cranberry cheesecake a delightful flavor and texture. The crust gets its sweetness from the pitted Medjool dates and the little bit of pure maple syrup that goes into making it.
Paleo Cranberry Cheesecake Filling
The filling of this cheesecake uses raw cashews as the base of the filling. These paleo cheesecakes can be quite versatile with the formula that I came up with for them (I have a few recipes on my blog). I think of the cashews as a blank canvas. I also used a cup-and-a-half of my homemade Paleo Cranberry Sauce, some coconut oil, some vanilla extract, the spices, and also reserved one cup of the cranberry sauce for stirring into the filling after it has been processed.
This paleo cranberry sauce is a bit on the tart side. If you want this to be on the sweeter side you can add more maple syrup or some coconut sugar to the sauce. Adding more syrup or sugar for added sweetness is entirely up to you. For me, personally, I like my cranberries on the tart side and I do prefer to keep my sugar intake on the lower side of the spectrum.
Paleo Cranberry Cheesecake Topping
I created a bullseye design on my Paleo Cranberry Cheesecake with a cup of my homemade Paleo Cranberry Sauce and some pecan pieces. This topping lends an awesome texture to this cheesecake. This is an interchangeable ingredient and you can use the nut of your choice here. Chopped walnuts are another great nut that can be used to top your paleo cranberry cheesecake. Or you can do a mixture of pecan pieces AND chopped walnuts!
Essential equipment needed for Paleo Cranberry Cheesecake
There are a few necessities that you are going to need to have on-hand to create this paleo cranberry cheesecake.
There is no way around this tool. You are most definitely going to have to have a decent food processor on-hand that is capable of processing these ingredients for your cheesecake. I love my KitchenAid food processor. The food processor will need to have a good cup size that can accomodate the ingredients. The filling of this paleo cranberry cheesecake has an entire pound of cashews and other ingredients that will need to go into the food processor so make sure yours is of good size.
You don’t need anything too fancy here but you will want to make sure that the pan has a tight grip on your ingredients. The filling is the part that needs a good amount of time to set. You don’t want your ingredients leaking out of the sides. I really love the Nordic Ware brand, they are a brand that I love and trust. You will also need some parchment paper to line the bottom of your springform pan.

It has an amazingly sweet and tart flavor and the texture will please your palate. This paleo cranberry cheesecake is a standout dessert. I have never in my life had anything quite like it. It has a very unique flavor and the texture is pretty similar to a traditional cheesecake (without all of the dairy!).
