Mmm ever have a dinner that was just so damn delicious it amazes you that you even created it yourself? That was the case with this slow-cooker beef bolognese recipe that I am about to share with you. Once all of the initial prep work is done you are pretty much good to go! This meal was so hearty and delicious and a perfect meal for a cool autumn day. My husband ending up having two heaping platefuls and my family of 3 polished off the entire two-pound beef roast.

This is a wonderful meal that you can prep in the morning and have waiting for you when you get home from work. I love how you can just toss food into a slow-cooker and the slow-cooker does all the work for you. This is a no-fuss simple and easy recipe to create.

What Is Beef Bolognese Sauce?

A typical beef bolognese sauce consists of beef, carrot, celery, and onion with plenty of tomatoes. My Slow-Cooker Beef Bolognese recipe contains pretty much all of those ingredients. I did swap out the onion for shallots though because I feel that shallots lend the dish a more exceptional flavor. This sauce simmers low and slow for 6 hours and results in the most flavorful, fork-tender beef.

Also, instead of using ground beef to make the Slow-Cooker Beef Bolognese Sauce I used a two-pound chuck roast. The chuck roast lends this dish a heartier texture and gives the sauce a nice, rich flavor.

How To Create The Slow-Cooker Beef Bolognese Sauce

This recipe starts off with browning the beef roast meat in some ghee. At this time, the shallots, celery, and garlic are also added to the pan to soften them up before adding them to the slow-cooker. You are going to need some good quality tomatoes to create this dish. In my recipe, I used the Muir Glen Fire-Roasted Diced Tomatoes. Muir Glen is a brand that I trust and if you have been following along here for a while that is my go-to brand for all of my tomato need.

Slow-Cooker Beef Bolognese Seasonings

Every good pasta sauce needs those essential seasonings to take it to the next level and delight the palate. One of the obvious seasonings in an Italian pasta sauce is garlic powder. Garlic powder gives your meat a nice, robust flavor in addition to the minced garlic you will be adding. As I say, you can never have too much garlic! I am a huge fan of garlic in my recipes and always prioritize squeezing some in.

I also added some oregano and some basil to this sauce. You can also just use a shaker bottle of Italian seasonings in place of those. Those are the herbs that are going to give this beef bolognese sauce its Italian flavor. I also decided to add in a pinch of nutmeg to this pasta sauce. You can also do a tiny pinch of cinnamon as well (it is not listed in the recipe but it still goes well with the beef).

Choosing A Gluten-Free Pasta For the Beef Bolognese Pasta Sauce

There is a whole universe of gluten-free pasta available now for us folks eating a gluten-free diet. I am a big fan of Banza and their line of chickpea pasta. I found that if you undercook by a minute and give them a little rinse in a colander after draining, you will have a great gluten-free al dente noodle.

I have found that Ronzoni also has great gluten-free pasta and it is also a very economical option. I find that this pasta often comes out al dente and has a great firm texture. I hate soggy gluten-free pasta. I never end up with soggy, sad pasta when I use Ronzoni.

Make It A Paleo Meal!

This slow-cooker beef bolognese pasta sauce recipe is a paleo recipe. If you would like to keep it paleo, simply just serve it with some zoodles (zucchini noodles), sweet potato noodles, or roasted spaghetti squash. Serving the pasta sauce with a vegetable noodle will also keep this meal low-carb. You will also want to omit the Parmesan cheese if you are going the paleo route with this dish.

Prep the beef
  1. Let's start with the prep! Chop carrots, celery, and shallots.
  2. Warm two tablespoons of ghee in a large skillet. Once warm, start browning the beef. Season the beef with salt and pepper on both sides.
  1. While the beef is browning, add in the chopped carrots, celery, shallots, and minced garlic. Soften these veggies.
  2. Time to season the meat and veggies. Sprinkle your garlic powder, oregano, basil, thyme, and nutmeg into the saute pan and coat the meat and vegetables with seasoning. Stir it all up until evenly distributed. Red pepper flakes are optional.
  3. Set slow cooker to low for 6 hours and then add the roast and the vegetables to the slow-cooker.
  4. Add in the can of diced tomatoes, tomato paste, and the bay leaves.
  5. Season with salt and pepper to taste.
  6. Once the beef is cooked you can shred this tender meat with a fork. Shred the meat and then add back into the slow-cooker and stir up.
  1. Once 6 hours have passed and your meat is ready it is time to prepare your pasta. Bring one pot of water to boil. Add in pasta and a pinch of salt. Boil pasta according to package directions.
  1. Drain pasta and then plate your meal with pasta on the plate first. Then add the amount of sauce desired.
  2. Sprinkle your dish with some shaved Parmesan cheese. (Optional).
  3. Eat and enjoy!
