Justin’s Cashew Butter

There is a new product out by Justin’s Nut Butter and I was so excited to give it a whirl. Justin’s just recently came out with a couple of different flavors of cashew butter and I was sent a couple of jars to review. If you love Justin’s almond butter, then you are going to absolutely love this cashew butter! This can be a very versatile ingredient in your kitchen and can be used for any recipe project that includes a nut butter. For instance, if a recipe calls for peanut butter or almond butter, you can swap that out for Justin’s Cashew Butter and the recipe should come out just fine. I am a huge fan of cashews so I can see myself having this as a regular ingredient to have on-hand in my Give It A Whirl Girl kitchen!

The first thing I thought of whipping up when I received these were my scrumptious oatmeal chocolate chip energy. I do call them my Bet You Can’t Eat Just One Balls because these balls are so addictive. There is just no way that one can eat just one and be done! You have to have at least 2 or 3.


GF Harvest Gluten-Free Organic Rolled Oats

I used gluten-free oats from GF Harvest in this oatmeal chocolate chip energy ball recipe. This was my first time giving this brand a whirl. I usually go with Bob’s Red Mill but I wanted to try something new. GF Harvest is a fantastic brand for those of you that are celiac or are following a gluten-free diet. GF Harvest goes the extra mile to ensure that their products are gluten-free.

GF Harvest Organic Rolled Oats gave these oatmeal chocolate chip energy balls the perfect granola texture. The bag of oats that I received was a very generous size at 41oz! The bag is huge and a steal for the price. These oats will last you a long time!


Enjoy Life Chocolate Chips

If you are a regular over here at Give It A Whirl Girl, then you already know that Enjoy Life Foods is my favorite go-to brand for chocolate chips! I use these very frequently in my kitchen. The wonderful thing about them is not only do they taste ridiculously great, but they are an allergen-free food and you can enjoy these in your gluten-free recipes. These Enjoy Life chocolate chips are also free of dairy so they are vegan and paleo friendly!

For this Oatmeal Chocolate Chip Energy Balls recipe, I went with Enjoy Life Food’s mini chocolate chips. The mini chips are perfect for these energy balls.


Honey

The honey used in this oatmeal chocolate chip energy ball recipe is going to do two things: sweeten up your balls (naturally) and it will work as a binder to keep all of your ingredients together. I highly suggest using high-quality honey in this recipe. Please make sure that it is pure honey and not the wanna-be honey that is full of corn syrup. I use the Madhava brand of honey in my recipes that call for honey.


Medjool Dates

The Medjool dates in this recipe have a similar function to the honey that is used. The dates will also lend some sweetness to your balls and will help them stick together. Both of these products (the honey and the dates) are naturally sweet. These energy balls do not contain any refined sugars.

Oatmeal Chocolate Chip Energy Balls

This is such a simple recipe for making a snack that your whole family can enjoy. You will find yourself making these over and over again. I will be honest with you! I made a dozen for my little family of 3 and we gobbled these all up within a day. All of these ingredients marry together to make one heck of a tasty snack.

I have not yet tried this recipe with maple syrup instead of honey but I am thinking that just might work if you are looking for a vegan snack. Maple syrup has the sweetness and the stickiness that these energy balls need. I will give it a whirl and let you all know if the maple syrup works in place of honey. This recipe is for my highly addictive gluten-free oatmeal chocolate chip energy balls. I used gluten-free oats, Justin's Cashew Butter, and Enjoy Life Foods mini chocolate chips. This is a simple and easy to do recipe that anyone could do.

Bet You Can't Eat Just One! Oatmeal Chocolate Chip Energy Balls RECIPE by GIVE IT A WHIRL GIRL
Instructions
  1. Soak the pitted Medjool dates in hot water to soften them.
  2. Warm one tablespoon of coconut oil in a small saute pan. Once the oil has melted place the coconut flakes in the pan and warm them on medium until a golden color.

  3. Warm the nut butter in the microwave for 10-15 seconds in a microwavable bowl until soft and spreadable.
  4. Chop the dates up into small pieces. Place the dates, coconut, oats, nut butter, and raw honey into a food processor and process on high until all ingredients come together and are well-incoportated. The ingredients will ball up.

  5. Take the oat mixture and place it in a medium mixing bowl with chocolate chips and stir well.
  6. Using clean hands, take the oat and chocolate chip mixture and form one-inch balls. Place in a square pan. Once all balls have been created you can place them in the refrigerator for 15 minutes. You should have approximately a dozen balls.
  7. Serve, eat, and enjoy!

  • To maintain maximum freshness, keep the oatmeal chocolate chip balls refrigerated.

      I am not sure. The coconut is not a necessity in the recipe… just something I added for a bit more flavor. You might be able to sub it for some nuts.
