Time to get pumped up about this energy ball recipe that I created using Betsy's Best Toasted Coconut Cashew Butter. You can use the nut butter of your choosing but this particular one by Betsy's Best will give you maximum flavor. This recipe included toasted coconut, toasted almonds, and chia seeds, along with gluten-free oats. Mini chocolate chips OPTIONAL (I recommend Enjoy Life Foods).

Toasted Coconut, Almond, & Chia Energy Balls No-Bake RECIPE
Instructions
  1. Gather all of your ingredients for this recipe.
  2. Warm 1 tablespoon of coconut and allow it to melt. Once melted, toast the coconut flakes and the slivered almonds until fragrant and golden. Use a medium heat setting.

  3. Place the oats, nut butter, toasted coconut, toasted almonds, maple syrup, and chia seeds into a food processer. Use the high setting to incoroporate all of the ingredients. They will ball up in the food processer.

  4. Once ingredients have been processed, remove the mixture and place it in a mixing bowl.

  5. If you want to add some mini chocolate chips to your energy balls you can do that at this point. (OPTIONAL)
  6. Using clean hands, you can take enough mixture to make a 1-inch energy ball and roll it together with your hands until smooth.
  7. You should have appoximately 14 energy balls now. Refrigerate to maintain freshness.
  8. Serve, eat, and enjoy!

  1. Gather ingredients and place all of them in the food-processor.

  2. Process the ingredients on high until well-incorporated and combined. Place ingredients in a medium mixing bowl.

  4. Place the energy balls in the refrigerator for 15 minutes.

  1. Soak the pitted Medjool dates in hot water to soften them.
  2. Warm one tablespoon of coconut oil in a small saute pan. Once the oil has melted place the coconut flakes in the pan and warm them on medium until a golden color.

  3. Warm the nut butter in the microwave for 10-15 seconds in a microwavable bowl until soft and spreadable.
  4. Chop the dates up into small pieces. Place the dates, coconut, oats, nut butter, and raw honey into a food processor and process on high until all ingredients come together and are well-incoportated. The ingredients will ball up.

  5. Take the oat mixture and place it in a medium mixing bowl with chocolate chips and stir well.
  6. Using clean hands, take the oat and chocolate chip mixture and form one-inch balls. Place in a square pan. Once all balls have been created you can place them in the refrigerator for 15 minutes. You should have approximately a dozen balls.
  7. Serve, eat, and enjoy!
