Paleo Matcha & Chocolate Cheesecake – RECIPE – Gluten-Free

Let it be known that making these cheesecakes are one of my favorite things to do in the Give It A Whirl Girl kitchen. These desserts are rich, flavorful, and actually quite nutritious. They are a much better alternative to regular cheesecake. The basic ingredients in these are fruit (medjool dates) and a variety of different nuts (mostly cashews). I am not going to lie, sometimes I even sneak in a slice for a filling breakfast. This matcha chocolate cheesecake dessert is unique in its flavor. If you are a fan of matcha (green tea) this recipe for a matcha chocolate cheesecake might just be perfect for you. I love everything about this particular one: the crust, the filling, and the chocolate ganache on top. It all marries together harmoniously to make one hell of an awesome cheesecake.

This almost-paleo matcha chocolate cheesecake requires several different components to make it all come together. I broke it down into sections for you. I suggest gathering up all of your ingredients first so you can breeze through this recipe with ease.

Instructions
Crust
  1. For the crust, you are going to use a food processor and place all CRUST ingredients in the food processor and blend them on high until all ingredients are incorporated. This will be thick and it needs to be spread out evenly on a parchment paper lined 9" springform pan.
Filling
  1. Place all of the filling ingredients (except for the one cup of sauce, reserve that for a bit later) into the food processor. Blend up these filling ingredients until smooth. You may need to stop the food processor and stir the ingredients with a soft spatula.
  2. Once the filling is smooth, place the filling into a medium sized bowl. Stir in one cup of fresh paleo cranberry sauce.
  3. Smooth the filling out evenly on the crust. I use a soft spatula to smooth out the filling.
  4. Refrigerate the filling and crust for 6 hours.
Topping
  1. Remove the cheesecake from the refrigerator and place the cranberry sauce and the pecans on top with whatever design you would like. I did a bullseye design with my sauce and my nuts.
  2. Slice, serve, and enjoy!

Pumpkin pie spice can be subbed in for the seasonings if you do not have them.

Paleo Dark Chocolate Raspberry Cheesecake Recipe (Vegan, Gluten-Free)

Decadent. Dark. Vegan & Paleo Dark Chocolate Raspberry Cheesecake recipe coming up for you! Did I forget to mention healthy? This dark chocolate raspberry cheesecake is full to the brim with an assortment of nuts and a mix of some frozen and fresh raspberries. This recipe is gluten-free, vegan, almost paleo, dairy-free, and does not contain any added refined sugars. Because fruit is also known as nature’s candy, the sweetness of this cheesecake is derived from the fruit and maple syrup rather than added sugars.

It all starts with a chocolate crust for this dark chocolate raspberry cheesecake

The base of this vegan dark chocolate raspberry cheesecake is going to be a chocolate crust made mostly with pitted dates, cacao powder, ground up almonds. There are a few other ingredients in the crust that you will need. This recipe calls specifically for cacao powder, not cocoa powder. There is a notable difference between the two. I did do a little write-up about the benefits of cacao powder awhile ago on my blog. Chocolate in its purest state (cacao) actually has numerous health benefits. The darker the chocolate, the better health-wise!

I use the cacao powder by LivFit. A one-pound bag goes for around $8.00 on Amazon and this bag will last a long time and come in handy for many other recipes. I have been using this bag of cacao powder for months now and still have a decent amount left. A little bit of cacao powder goes a long way!

To make the chocolate crust you will also need some raw unsalted almonds. These almonds do not get completely ground up in my food processor and the almonds give the vegan dark chocolate raspberry cheesecake a great texture.

The chocolate crust of this vegan and paleo dark chocolate raspberry cheesecake will also need some pitted dates. The pitted dates will not only sweeten your crust naturally but will also help keep all of the ingredients together (dates are very sticky). I suggest soaking your dates in some hot water for a few minutes and chopping them up before proceeding with putting them in the food processor.

The raspberry filling… the heart of the cheesecake

The main component of the filling of this vegan dark chocolate raspberry cheesecake is actually raw cashews! Say what?!?!? Yes, I said cashews and you heard me properly. You will be using an entire pound of raw cashews for the filling that are soaked overnight to soften them up. You can get away with using more affordable, lightly-salted cashews but please steer clear of the regular salted ones or you will make an ugly face when you take the first bite of your salty (ugh) cheesecake! This is a sweet cheesecake so please do avoid making it a salty one or else you will be sorely disappointed.

Obviously, you will be using a bunch of raspberries as well. I actually went with a bag of Kroger’s Simple Truth Organic Raspberries for the filling and it turned out to be a great choice. So, I used frozen raspberries for the filling and I used a pint of fresh for the topping. I don’t know about you, but I sure go crazy for anything that is dark chocolate raspberry. To me, those two ingredients when married together, result in a match made in heaven. I feel pure bliss and I feel like I am on Cloud 9 while consuming this combination.


Thick chocolate ganache to top it all off

For the topping of this vegan dark chocolate raspberry cheesecake, I used my favorite brand of dark chocolate chips from Enjoy Life Foods. Not only are their dark chocolate chips vegan-friendly but they are also free from several common food allergens. I always play it safe and use this brand in my recipes and their chocolate chips are a family fave. My daughter and I are actually known to just snack on them straight out of the bag, they are that great!

The ganache turned out pretty thick from using one cup of chips combined and melted down with a tablespoon of coconut oil. I used an 8-inch springform pan for the cheesecake and I believe you can cut down and use 3/4 of a cup for a thinner chocolate shell. That is just my presumption and guess though. You can always try that and add more if needed.

Final thoughts

This paleo and vegan chocolate raspberry cheesecake really is heaven on Earth to me! I really feel as though I passed the healthy cheesecake test with this recipe! These cheesecakes are my all-time favorite creation in the Give It A Whirl Girl kitchen and I am honestly starting to feel like my fridge needs at least one in there each week. Call me naughty but sometimes I will even snatch up a slice and call it breakfast. No guilt here but I will give myself a pat on the back for coming up with a recipe for something this is typically not healthy and transforming that into an almost guilt-free recipe.

As much as I do love making these cheesecakes, really the hardest part is the waiting game. It is so super important not to rush and cut into this cheesecake. You have to allow it time to set or else the whole thing will become mush when the springform pan is removed. Please give it time to all come together. It will be worth the wait, I can assure that!

Paleo Chocolate Chip Cookie Dough Cheesecake RECIPE (Vegan, Gluten-Free)

Saturdays are my favorite days of the week to get in the Give It A Whirl Girl kitchen and whip up a tasty treat for my family to enjoy. This weekend I created a vegan and gluten-free, no-bake Chocolate Chip Cookie Dough Cheesecake. Is there anything in this world better than edible chocolate chip cookie dough? Hell no! This Chocolate Chip Cookie Dough Cheesecake is completely safe to indulge in and does not contain any eggs which are typically found in cookies. The filling is of this cheesecake mimics the real deal quite well and my little family of 3 absolutely loved this faux cheesecake recipe.

I think that it is a universal idea that raw cookie dough is the bomb! When I was a little girl and my mom whipped up a batch of cookies I always had to have a taste of the cookie dough on the spatula. I would give it a good lick and the taste of raw cookie dough is pure, straight up comfort food! Am I right?

Raw cookie dough almost always has eggs in it, and let’s face it… raw eggs can get you sick with salmonella nowadays and that is the last thing in the world that anyone needs. This recipe is perfect for those that admire that taste of raw cookie dough. If you don’t feel like creating an entire cheesecake with this recipe, go ahead and just create the filling and indulge in that with a spoon or use something to dip in it. The filling on its own makes a great dip!

Creating the Chocolate Chip Cookie Dough Cheesecake

This cheesecake has a very rich taste thanks to the 4th & Heart ghee that I used. If you are able to get hour hands on the 4th & Heart vanilla ghee I am sure that would be fantastic in this recipe as well. In my cheesecakes, I always go with coconut oil but for this one, I swapped that out for ghee since chocolate chip cookies are full of butter. The ghee turned out the be a wise choice. When I took that first bite of this cheesecake I knew that using ghee in this recipe was a smart decision. I used coconut oil a couple months ago to make a cookie dough cheesecake, and while it was delicious this recipe with the ghee knocked it out of the park!

It may seem as though this recipe has a lot of ingredients. If you have a well-stocked pantry, chances are you already have most of the items on the ingredient list. There are also some kitchen items, such as a good-sized food processor, that you will need. A springform pan is essential as well in order to create a cheesecake. A standard 8-inch size will do. If you use anything larger you will have to increase the amount of the ingredients in the chocolate ganache topping.

Chocolate Chip Cookie Dough Cheesecake crust

The first step of this recipe is to create the crust of the cheesecake. For the crust of this cookie dough cheesecake, I used a mix of Medjool dates, raw almonds, almond flour, finely shredded coconut, maple syrup, cacao powder, ghee, and some pure vanilla extract. This results in a chocolatey crust due to the added cacao powder. If you do not want a chocolate crust, simply just omit the cacao powder. The crust is gluten and grain-free. The crust has a nutty texture (from the almonds) and the perfect amount of chocolate flavor.

Chocolate Chip Cookie Dough Cheesecake filling

The filling is composed of raw cashews, almond flour, coconut flour, ghee, maple syrup, lemon juice, coconut sugar, and vegan dark chocolate chips. This is the part of cheesecake that is all about that edible cookie dough flavor. The soaked cashews mixed with that little bit of lemon juice, believe it or not, are going to imitate a cheesecake. This type of formula with the cashews and lemon juice is very versatile and you can totally get creative here with your non-dairy, vegan cheesecake. I posted some other recipes for cheesecakes at the bottom of this post.


Chocolate Chip Cookie Dough Cheesecake topping

For this Chocolate Chip Cookie Dough Cheesecake, we are going to top it off with a simple chocolate ganache that is only 2 ingredients: vegan dark chocolate chips (from Enjoy Life Foods) and just a dab of coconut oil to smooth it all out. This is my daughter’s favorite part of any cheesecake that I create. Gee, I wonder why? Could it be because she is a chocolate lover like myself? This is the first part that she always goes for when I cut her a slice.


Final thoughts:

I hope you enjoy this recipe as much as I did and my little family of three did. We each enjoyed a slice after our dinner last night. Usually, when I mention the word “cheesecake” to my family they shudder a bit. They are not cheesecake fans BUT I always encourage them to eat with an open mind. Guess what? They loved this faux cheesecake! The great thing about this cheesecake is that it is actually leaning towards the side of being healthy. It is chockful of almonds and cashews and it does not contain any refined sugars or dairy.

So go ahead and indulge a bit! Even go ahead and have a nice slice for breakfast if that is what your heart desires. I will let you in on a little secret~ I do!

Pumpkin Spice Cheesecake – Paleo & Vegan – Gluten-Free Recipe

Ahhhh fall! It is definitely feeling like fall over here in Michigan and I have the perfect Pumpkin Spice Cheesecake recipe to make your heart and soul happy. Attention all pumpkin spice lovers… you will love the no-bake, gluten-free, paleo, and vegan Pumpkin Spice cheesecake that I created. I honestly do love and prefer this over your average pumpkin pie.

This cheesecake is chockful of healthy ingredients and does not contain any added sugars. In this recipe, you will be using quite a few almonds and cashews. Believe it or not, this method works to make a dairy-free cheesecake. That little bit of lemon juice that you will add magically transforms these ingredients into cheesecake heaven! This dessert would be perfect to serve after a Thanksgiving Day feast. I have confidence that it would please even the pickiest guest will be full of bliss devouring this tasty treat.

Paleo & Vegan Crust Is Your Base

First things first! You need to work on your crust for your Pumpkin Spice Cheesecake. This crust is a no-bake crust and it is gluten-free. You will need to have a decent food processor to create this recipe. You will also need some raw almonds for the crust.

You will also need some pitted Medjool dates. If you can not find the pitted dates you can purchase dates and remove the pits. For this crust recipe, I suggest soaking your dates in hot water to soften them. The pit will be easy to remove.

This crust will also need some almond flour. I suggest going with Bob’s Red Mill because they always produce an excellent, high-quality product. Even though you will not be baking this crust the flour acts as a binder.

This recipe will also require a good amount of extra virgin coconut oil. Nothing wrong with some healthy fats!

Speaking of healthy fats, you will need some finely shredded and unsweetened coconut as well. I also used Bob’s Red Mill for this. If you are not a coconut fan, fear not! It does not have a taste of coconut to it.


Some pure maple syrup will also be needed and this will be a big part of the filling as well. Since there are no added, refined sugars in this cheesecake recipe you will need to sweeten it with something.

Pumpkin Spice Cheesecake Spices

If you have a bottle of pumpkin pie spice on-hand you can use that to spice up your paleo & vegan cheesecake. If not there are only 4 essential ingredients and you probably already have them in your spice cabinet.

For the pumpkin spice seasonings, you will need some cinnamon, allspice, ginger, and ground cloves.

These spices will give you the essence of fall in your pumpkin cheesecake dessert. Both the crust and the filling will require these spices.

Pumpkin Spice Cheesecake Filling

Time to get nutty!

Here’s the part where will be getting really nutty! You will need four cups of raw cashews that are soaked overnight to soften them. This is an important step that will result in a smooth as silk filling. Raw cashews do tend to cost more. You can get away with using more affordable LIGHTLY SALTED cashews but the preferred ingredient to use here is raw. Cashews mimic the texture of a traditional cheesecake quite well. You will be surprised when you cut that first slice out of the cheesecake and give it a whirl!

Pumpkin cheesecake has to have pumpkin, right?

Obviously, you are going to need some pumpkin for the guts of this cheesecake. For the filling, you will need a can of pure pumpkin puree. Make sure there are no added ingredients. You just want to find a can of puree that is straight up pure pumpkin and nothing else. If you want to use an actual pie pumpkin just make sure you have two whole cups of pumpkin.

Let’s sweeten this up!

You will need some pure maple syrup to sweeten this recipe up. This filling uses nearly a cup of maple in the filling and you will get some autumn vibes from this natural sweetener. When I say pure maple syrup, this is not to be confused with a bottle of Aunt Jemima pancake syrup. In paleo cooking, you have to use the real deal straight from the try and not full of high fructose corn syrup.

Lemon juice is essential for a paleo/vegan cheesecake

It is strange how this works, but combining the cashews with a couple tablespoons of lemon juice will give you the cheesecake flavor that is found in a traditional cheesecake. Do not skip out on this part. You can either use a fresh lemon or lemon juice found in a bottle.

Final thoughts

I enjoyed this pumpkin spice cheesecake soooooooooo much that I do believe I will be whipping one of these up for the Thanksgiving Day feast that I am hosting at my home. I would be proud to serve this paleo dessert to my family and I think it would be the perfect way to end a gigantic turkey feast. I have never actually had a pumpkin cheesecake until last night and I feel as though I enjoy it more than traditional pumpkin pie. If you are a nut lover, you will go nutty for this recipe!

On the weekends I love to have my biggest cooking days. There is always a day thrown in there where we go out to a restaurant but most of my bigger dinners are reserved for weekends. Sunday kicked off with some healthy dessert making in the kitchen. I had a craving for something white chocolate & raspberry so I made a paleo cheesecake. I absolutely love making any kind of dessert but for me, paleo is my favorite kind to whip up because it is a fairly new concept for me. I am trying my best to get a grasp on paleo and gluten-free baking & cooking. Every day is a learning experience in the kitchen. Today I am going to talk about my experience and my process of making the cheesecake that I created yesterday.

My husband is off work Fridays and Saturdays. We did not have any plans for those two days so we just had a chill time at home. I needed something to pass the time so I resorted to cooking. What better way to spend the time! I started off Saturday with some multigrain pancakes for Joe and Chloe. I got started on dessert, a Paleo Cookie Dough Cheesecake, early because those cheesecakes take a few hours to set. And dinner was simple~ ribeye steaks marinated in Primal Kitchen Sesame Ginger and peppered bacon wrapped in asparagus. It was a delightful day of cooking from start to finish.

Seems kinda contradictory though to make a vegan cheesecake for dessert after a ribeye dinner! I mainly chose to make this type of cheesecake for the fact that it is paleo and uses only gluten-free ingredients. I do try to eat vegan meals on occasion though because I do enjoy them. My favorite vegan food to make is “nice cream”. It is a vegan ice-cream created with frozen bananas, coconut milk, and other fruits, etc. It is a simple, healthy dessert to create at home and a nice alternative to regular ice-cream.

Hosting My First Thanksgiving by Give It A Whirl Girl

Hosting Thanksgiving At My Home – My First Time Wrap-Up!

Thanksgiving has came and went. Whew! This was my first year hosting the Thanksgiving Day holiday at my home. I gotta say that I was probably nervous about the whole situation for the month leading up to it. I know that a lot of work and prep goes into pulling off this festive day. Our feast that we had here was perfect and excellent from start to finish. I was satisfied with how every single element of it came out. No complaints whatsoever here! I hope all of my readers also had a great holiday and enjoyed their big plate of food!

Here is a look at my dinner plate from Thanksgiving! I have a little bit of everything on my plate: roasted turkey, redskin mashed potatoes with French butter, Brussels sprouts, wild rice stuffing with mushrooms and cranberries, White Castle stuffing, Clean Bean (green bean) Casserole, ambrosia, sweet potato casserole, and my favorite~ Everything But The Kitchen Sink Cranberry Sauce! I am hoping to do a recipe post soon for my famous cranberry sauce. I can turn any cranberry-sauce-hater into a lover! So far it has worked with two haters in my family.

Today I will be discussing Thanksgiving and how we pulled it off. I could not have possibly made this day possible without the help and support of my family. My mom, Kathie, was a huge help. She purchased the turkey and a great majority of the food that was served. Money is super tight right now with my family so I was very grateful that she pitched in (big time) to help me create this feast.

My mom bought the 19-pound turkey and an electric roaster to cook the turkey in. I spotted the roaster when we took a trip over the Costco and I thought it would be a great idea to cook the turkey in there so we could free up the oven space for the side dishes that needed to be warmed up. Turned out to be the best idea ever!

My stepmom, Evelyn, was also a huge help. She came over early on Thanksgiving to help my mom and I prep. Evelyn brought over an appetizer and a side dish to pass as well. The appetizer that she brought was unique. They were bacon-wrapped water chestnuts. Sounds strange, doesn’t it? Well, they were delicious. These got gobbled up pretty quick. For a side dish, she brought her famous sweet potato casserole. My stepmom was incredibly helpful with the kitchen clean up as well. That helped me tremendously.

The day before Thanksgiving, I did what I could to prep for the big day. The first thing that I did was I created my Pumpkin Spice Cheesecake. This is my favorite fall dessert at the moment. I wanted to get that done early because the cheesecake needs to set for at least six hours. I gave it plenty of time to set by creating it the morning before the holiday. I have a recipe for this paleo/vegan cheesecake on my blog. I did modify the recipe just a tad bit. Obviously, I did something different for the topping. Instead of creating a whipped cream with coconut cream I topped this cheesecake with a ton of walnuts and pecans. I wanted to make it extra nutty. I purchased a can of non-dairy, almond milk whipped cream to top it with. Instead of using the spices individually I used a jar of pumpkin pie spice.

Paleo cranberry sauce

I also busted out my slow-cooker the day before Thanksgiving to make my paleo cranberry sauce in advance. This is one of those set-it-and-forget-it recipes. I love cranberry sauce and my cranberries have the power to turn cranberry sauce haters into lovers! My husband never eats cranberry sauce. Guess what? This year he did! And I know that he enjoyed it because he helped himself to some for his leftover plate. This cranberry sauce is simple to make. I call it my Everything But The Kitchen Sink Cranberry Sauce! There are many ingredients that go into it but it is very easy to create. There are no refined sugars in this cranberry sauce. I use an entire bottle of pure maple syrup to sweeten it. I also use fresh-squeezed orange juice, orange zest, two ambrosia apples, walnuts, and pecans to create the sauce. The apples are a nice, welcome addition and the nuts give it a great texture. The sauce is heavily seasoned with pumpkin pie spice. I picked up a bottle of the Spice Hunter’s Pumpkin Pie Spice at Nino Salvaggio’s in St Clair Shores. This pumpkin pie spice seemed like a wonderful blend of spices. It worked out well in my Pumpkin Spice Cheesecake too, so the funds I spent on it was a great investment.

Wild Rice (Gluten-Free) Stuffing

I wanted to have a gluten-free option for stuffing so I searched the web for a great slow-cooker recipe, and came across a recipe by Well Plated for wild rice, mushroom, and dried cranberry stuffing. This turned out to be such a great gluten-free option and I would totally love to whip this up again. The mushroom sauce turned out nice and creamy (way better than canned). For mushrooms, we went with the baby portobello mushrooms. They turned out to be a better alternative to plain ol’ regular white mushrooms. I wanted to use cremini but I was not able to locate any so maybe next time! Clean Bean Casserole

I wanted to have a green bean casserole to go along with my Thanksgiving feast. I don’t know about you, but I sure hate the thought of using canned green beans and a can of cream of mushroom soup for my recipe. So for this green bean casserole, I made my own creamy mushroom sauce and I used two big bags of fresh green beans. For the topping, I roasted some slivered onions and shallots in the oven and coated them with my Bob’s Red Mill Almond Flour. This recipe was inspired by Paleo Grubs. I used the recipe to guide me along the way I put my own spin on things. It is a fantastic green bean casserole recipe so please be sure to check it out on the Paleo Grubs blog.

 

White Castle Stuffing

White Castle stuffing was my mom’s grand idea. Our family has always been a fan of the White Castle sliders so we figured we would try out the stuffing that we would hear about year after year. I usually avoid gluten but heck, it was Thanksgiving and I had to give this stuffing a whirl. It sounds crazy to use hamburger sliders as the main component in a stuffing recipe, but I am telling you that this was actually incredible!

I really wish I would have taken more photos of the appetizers that we had. I was so busy it just slipped my mind I guess. I made a delicious maple pecan baked brie. Oh my gosh, it was soooo good. Definitely my favorite appetizer of the day. If you want a great recipe for this brie I used the recipe from Mother Thyme and it was pure excellence! Check out her blog for other fabulous recipes. We had some cheese spreads, Boar’s Head salami sticks, meatballs from my sister, and those bacon-wrapped water chestnuts from my stepmom.

Mashed red potatoes with French butter

Missing in action here with the photos I took are the mashed red skin potatoes. Me and my mom recently discovered Kroger brand (Private Selection) French butter. It is a very rich and creamy butter and it will be my new go-to butter for my mashed potatoes.

Roasted maple Brussels sprouts

This side was not planned for the Thanksgiving Day feast over here. I had a giant stalk of Brussels sprouts in my fridge and I figured that I could incoporate them into the meal somehow. I roasted them for a bit and then finished them off in the oven with some pure Michigan maple syrup. I have a big adoration for anything roasted with maple syrup, especially this time of year in the fall. Everyone that took some for their plate loved them so I am very glad I used them up for Thanksgiving.

Sweet potato casserole

My stepmom brought over a sweet potato casserole and I was grateful for that. I like sweet potatoes but I’m not normally a fan of sweet potato casserole. I put a bit of everything on my plate this year and I did give her casserole a whirl. I ended

Whenever I try out a new product and I become a fan I do my best to promote these items and spread the word about them. Paleo Cranberry Apple Sauce With Pecans RECIPE
Instructions
  1. Start out by pouring one 2lb bag of fresh cranberries into a slow-cooker. Set it on low for 6 hours.
  2. Zest one whole orange and place zest into the slow-cooker.
  3. Chop the orange in half and squeeze all of the juice out and place it in the slow-cooker.
  4. Pour maple syrup into the slow-cooker.
  5. Add the pecan pieces to the slow-cooker.
  6. Add the spices to the slow-cooker (cinnamon, cloves, cardamom, and allspice).
  7. Give it all a good stir and incorporate all of the ingredients.
  8. Cook on low for 6 hours or high for 4 hours.

Paleo Mississippi Roast Melt In Your Mouth Meat Recipe (Slow-Cooker) (Gluten-Free)

Meat so tender and juicy it just melts in your mouth. Mmmm! This is what I will be discussing today… my Paleo Mississippi Pot Roast recipe! I will fill you in on how I made a gluten-free Mississippi Pot Roast without any seasoning packets. We DIY over here! I included my recipe for both the seasoning and the roast. This slow-cooker recipe requires minimal prep and then you load the meat into your slow-cooker and it does all of the work for you… set it and forget it! This is a simple way to ensure that you will have a mouthwatering meal waiting for you after a long, busy day at work.

If you are a seasoned cook (pun intended) you should already have all, if not most, of these ingredients, stashed away in your pantry for this Paleo Mississippi Roast. I had everything on hand so I experimented here and created this ranch-flavored seasoning to coat my meat with.

Simply mix all of these ingredients together in a small bowl and set aside. You will rub this completely on your roast. You likely will not need all of it but at least half and the other half can be reserved for a future use. Keep reading to see how I used the rest of my seasoning.

Homemade paleo friendly ranch seasoning for Mississippi Roast

Mississippi Pot Roast recipe

This recipe will feed 4-5 people if you go with a 2 1/2 lb roast like I did. If you need to feed more, simply purchase a larger roast.

Ingredients for roast:

  • You will need a good sized chuck roast or any other roast of your choosing. I used a 2 1/2 pound chuck roast
  • Homemade ranch seasoning (recipe above)
  • Pepperoncinis (as many as your heart desires)
  • 1 cup beef broth
  • 2 tablespoons minced garlic
  • 5 tablespoons ghee – (2 tablespoons for browning meat and 3 tablespoons to top the roast with)

Directions for roast:

  1. Rub your roast with the ranch seasoning that you created.
  2. Warm 2 tablespoons of ghee in a large skillet or frying pan. When the pan is warm and ghee is melted place your roast in there and brown on all sides.
  3. Once meat is browned place in slow-cooker.
  4. Add two tablespoons of minced garlic
  5. Add one cup of beef broth to slow-cooker.
  6. Top meat with 3 tablespoons of ghee. It will melt down on the meat and infuse it with flavor and juiciness.
  7. Top the roast with pepperoncinis. I ended up using half a jar.
  8. Cook on low for 6 hours.
  9. Remove meat from slow-cooker and place on platter to slice and serve.
  10. Eat and enjoy! Serve with your favorite side-dish or use my suggestion below for roasted ranch potatoes.
